In an interesting study that was completed last year, Rutgers University researchers found that moms want to prepare healthy meals for their families, but they want to do it quickly and conveniently.

Carol Byrd-Bredbenner, Ph.D., RD, FADA, a professor of nutritional sciences at Rutgers University, was the lead researcher of the study. The study analyzed important factors that impact the foods moms select and serve, while noting that they have a significant influence on the family’s meals and meal planning as a whole. Not surprisingly, a conclusion was reached that the food choices moms make have an overall impact on the health of their families.

The study and its results are skewed to the benefits of canned foods, but there are interesting conclusions that were made.
