Most peas grown are used for processing, we tend to eat them processed a lot more than fresh because they have a relatively short season. Peas are very good for you. They provide vitamins C and K, fiber and protein. They also contain some A and B group vitamins, magnesium, potassium and iron. Organic food is produced by farmers who emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations.
