Adding inulin or oligofructose to a beverage sweetened with a combination of acesulfame-K and aspartame resulted in increased sweetness potency after weeks of storage time, according to presentation 76-8 given by Jessica Aldrich, technical sweetener specialist, Nutrinova Inc. Inulin and oligofructose function as fiber. In this experiment inulin provided 1 cal/gm and was 0.1 times as sweet as sucrose. Oligofructose provided 1.5 cal/gm and was 0.65 as sweet as sucrose.
