Water is the most abundant nutrient in our body and plays an important transmission function in every body cell and tissue. Sixty percent of our body weight is water. The fact that you can live without food for a long period of time, even months, but live only for a few days without water is true. Under normal conditions, the body releases about one quart of water daily. Therefore, replacement to equal the losses is very important for survival.

Dehydration is the most common problem of water imbalance due to water losses and deprivation. The effects of dehydration on nutrition can adversely affect ones health. Dehydration is the major cause of ones diminished ability to perform during endurance activities. Body water is lost through the stomach, respiration, sweat, and the kidneys. It is recomended that 24oz of water a day should be taken. This amount can double or even triple with endurance type exercise.



A note about water: More and more evidence shows the benifit of being well hydrated.

Studies show that 75% of Americans are chronically dehydrated (likely applies to half the world's population), leading to possible health problems such as fatigue. In 37% of Americans, the thirst mechanism is so weak that it is often mistaken for hunger, leading to over-eating. Even MILD dehydration will slow down one's metabolism as much as 3%.



Bottled Water: Some types of bottled water are not subject to the same regulations as tap water. These are regulated as food products, and their regulations are largely related to sanitary food handling and processing practices. Bottled water manufacturers will provide a detailed report on the quality of their product to consumers who call to request it.

Coconut milk is a sweet, milky white cooking base derived from the meat of a mature coconut. The colour and rich taste of the milk can be attributed to the high oil content and sugars. In Malaysia, Brunei and Indonesia coconut milk is called santan and in the Philippines it is called gata. In Thailand it is called ga-ti and used in many of the Thai curries. In Brazil, it is called leite de coco (literally, coconut milk). It should not be confused with coconut water (coconut juice), which is the naturally-occurring liquid found inside a coconut.









Organic food is produced by farmers who emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations. Organic meat, poultry, eggs, and dairy products come from animals that are given no antibiotics or growth hormones. Organic food is produced without using most conventional pesticides; fertilizers made with synthetic ingredients or sewage sludge; bioengineering; or ionizing radiation. Before a product can be labeled "organic," a Government-approved certifier inspects the farm where the food is grown to make sure the farmer is following all the rules necessary to meet USDA organic standards. Companies that handle or process organic food before it gets to your local supermarket or restaurant must be certified.

Chicory is the common name given to the flowering plants in genus Cichorium of the family Asteraceae. There are two cultivated species, and four to six wild species.



Common chicory (Cichorium intybus) is a bushy perennial herb with blue or lavender flowers. Originating from Europe, it was naturalized in North America, where it has become a roadside weed. The roots are baked, ground, and used as a coffee substitute and additive in the plant's Mediterranean region of origin, although its use as a coffee additive is still very popular in the American South, particularly in New Orleans. Common chicory is also known as blue sailors, succory, and coffeeweed. The plant is cultivated and used as endive under the common names radicchio, Belgian endive, French endive, or witloof. It is grown in complete darkness to keep new leaves tender and pale.



True endive (Cichorium endivia) is a species of chicory which is specially grown and used as a salad green. It has a slightly bitter taste and has been attributed with herbal properties. Curly endive and the broad-leafed escarole are true endives.



Cichorium is used as a food plant by the larvae of some Lepidoptera species including Setaceous Hebrew Character and Turnip Moth.



Root chicory (Chicorium intybus var. sativum) has been grown since the Middle Ages as a coffee substitute. Around 1970 it was found that the root contains up to 20% inulin. Since then, new strains have been created, giving root chicory an inulin content comparable to that of sugar beet (around 600 dt/ha). Inulin is mainly present in the plant family Asteraceae as a storage carbohydrate (for example Jerusalem artichoke, dahlia, etc.). It is used as a sweetener in the food industry (with a sweetening power 30% higher than that of sucrose). Inulin can be converted to fructose and glucose through hydrolysis.



Chicory, with sugar beet and rye was used as an ingredient of the East German Mischkaffee (mixed coffee), introduced during the 'coffee crisis' of 1976-9

Sugar cane, is a tropical plant that is a cane. This cane is ready for cutting in 11-18 months. Unfortunately, most of the cutting is still done manually, although some is done mechanically. About half of the loading being mechanised.

After reaching the factory, the cane is chopped with a series of rapidly rotating knives. Iron and iron-alloy particles are removed by an electromagnet. The chopped cane is shredded, crushed and a small amount of water added to faciliitate cane juice separation. Generally, the crushed mixture is slightly acid[pH5.5].



Mixed juice is heated and clarified by the addition of lime and the decantation of impurities. The clarified juice is evaporated and the syrup transferred back and forth depending upon the Brix [pan 1: 16-180 Brix; pan 3: 55-750 Brix; final pan: 900 Brix]. The final syrup mix is centrifuged to extract the sugar crystals and remove molasses and liquid. The brown sugar may be further refined.



Brown sugar or raw sugar is decolorized by passing through carbon filters, recrystallizing in vacuum boiling pans, and removing final liquid by centrigation. It is simply a crystallization process.



From the process, three by-products of sugar cane are formed: molasses, bagasse and filter scums. The latter two by-products are recycled back into the processing plant. The filter scums contain phosphoric acid and are used as fertilizers in the fields. The bagasse is used as fuel to produce steam and electricity.

Starches have been widely used as thickeners for the food industry for many years. The primary sources of food starches are corn, wheat, potato and tapioca. Rice starches are the little known secret of the starch world, comprising a very small percentage of the total starch usage. Don’t be fooled by the fact that rice starches are not as common as the other starch sources. They have many unique attributes that make them some of the most interesting starches in the food industry.

Rice is the most widely consumed basic foodstuff in the world. Each year over 500 million tons of rice is harvested, providing sustenance to many countries and people throughout the world. The keys to the unique properties of rice starches are found in its many varieties. Due to different climates, soil characteristics and cultures, over 240,000 registered varieties of rice exist in the world. This variety leads to a wide range of rice starches with many different characteristics including: different starting gelatinization temperatures, textures, processing stabilities and viscosities. This means that a natural “native” rice starch may provide all the stability that a food processor will need without having to resort to chemical modifications.

Any of a class of carbohydrates found in certain plant cell walls and tissues. They are principally composed of a galactose derivative, galacturonic acid. In fruits, pectin keeps the walls of adjacent cells joined together, helping them remain firm and hold their shape. Kelp are large seaweeds, belonging to the brown algae and classified in the order Laminariales. Kelp grows in underwater forests (kelp forests) in clear, shallow, oceans, requiring nutrient rich water below about 20°C. It is known for its high growth rate - the genus Macrocystis grows up to 30 cm per day, to a total length of up to 60 meters.

Kelp ash is calcined and rich in iodine and alkali. In great amount, kelp ash can be used in soap and glass production. Alginate, a kelp-derived carbohydrate, is used to thicken products like ice cream, jelly, and toothpaste, as well as in manufactured goods.

The distilled or evaporated oils of foods or plants (such as nuts, seeds, fruits, vegetables, herbs, spices, bark, buds, roots, leaves, meat, poultry, seafood, fish, dairy foods, or eggs) that are dissolved in an alcohol base or allowed to dry to be used as a flavoring. Food extracts as they are often labeled, are used to add a concentrated flavor to many food dishes, especially baked goods and desserts, without adding additional volume. Available in solid (cubes, granules or powdered), liquid or jelled form, extracts may be labeled as pure, natural or artificial. Pure and natural extracts are governed by laws in many countries that require compliance with procedures that take the extract ingredients directly from the named flavor, such as extracting oils directly from the vanilla bean to make pure or natural vanilla extract. Artificial extracts are flavors that do not necessarily use any ingredients directly from a source named for the extract but instead used combinations of ingredients to arrive at a flavor representative of the named food extract, such as artificial lemon extract. Some of the most widely used extracts include vanilla, almond, anise, maple, peppermint, and numerous solid or jelled extracts such as beef and chicken bouillon or meat demi-glaces. If the grapes are in contact for too long, the resulting wine may be too potent, or what is sometimes called “over-extracted”.



Juices of fruits and vegetables are often extracted as juice extracts to be used similar to other food extracts, as a flavoring when preparing foods. A common utensil for the purpose of extracting lemon juice is available to assist with home recipes requiring a lemon flavoring.

There is increasing interest in the roles played by magnesium, phosphate and calcium in the development and enhancement of physical performance by athletes and physically active individuals. This interest is sparked by knowledge that magnesium and phosphate are needed for energy production by cells, and calcium plays a key role in maintenance of bone mass and possible prevention of injuries. Support for generalized magnesium supplementation is low unless individuals have decreased cellular magnesium. Acute and chronic supplementation with phosphate compounds does not increase physical work capacity or endurance in humans. Tricalcium phosphate is a compound with formula Ca3(PO4)2. It is also known as calcium orthophosphate, tertiary calcium phosphate, tribasic calcium phosphate, or "bone ash" (calcium phosphate being one of the main combustion products of bone).



It has an alpha an alpha' and a beta crystal form, the alpha state being formed at high temperatures. As rock, it is found in Whitlockite.



Tricalcium phosphate is used in powdered spices as an anti-caking agent.



Calcium phosphate is an important raw material for the production of phosphoric acid and fertilizers, for example in the Odda process.



Calcium phosphate is also a raising agent (food additives) E341. Is a mineral salt found in rocks and bones, it is used in cheese products.



It is also used as a nutritional supplement. There is some debate about the different bioavailabilities of the different calcium salts.



It is commonly used in porcelain and dental powders, and medically as an antacid or calcium supplement, although calcium carbonate is more common in this regard.



Another practical application of the compound is its use in gene transfection. The calcium ions can make a cell competent (a euphemism for "rip holes in its membrane") to allow exogenous genes to enter the cell by diffusion. A heat shock afterwards then invokes the cell to repair itself. This is a quick and easy method for transfection, albeit a rather inefficient one.

Vitamin D is an essential vitamin that you need to prevent rickets. It can be used to treat hypoparathyroidism (underactive parathyroid gland), psoriasis (scaly skin), osteoporosis (bone loss), osteomalacia (soft bones), and scleroderma (hardening of the skin and certain organs).



Other names for Vitamin D include: Calciferol, Ergocalciferol, Cholecalciferol, Vitamin D2, or Vitamin D3.



A "vitamin" by definition is a substance regularly required by the body in small amounts but which the body cannot make and is, therefore, required to be supplied in the daily diet. Technically the molecular species classified as vitamin D is not really a vitamin because it can be produced by exposure of the skin to sunlight. However, for nutritional and public health reasons, vitamin D continues to be classified officially as a vitamin.



Types: There are two chemical forms of vitamin D, namely vitamin D2 (sometimes referred to as ergocalciferol) and vitamin D3 (sometimes referred to a cholecalciferol). The natural form of vitamin D for animals and man is vitamin D3 that is produced in their bodies from cholesterol and 7-dehydrocholesterol. An alternative vitamin D2 is derived from the yeast sterol ergosterol by chemical procedures.

Vitamin B12, also called cobalamin, is important to good health. It helps maintain healthy nerve cells and red blood cells, and is also needed to make DNA, the genetic material in all cells . Vitamin B12 is bound to the protein in food. Hydrochloric acid in the stomach releases B12 from protein during digestion. Once released, B12 combines with a substance called intrinsic factor (IF) before it is absorbed into the bloodstream.

Good sources include meat, particularly liver, salmon, cod, milk, cheese, eggs, yeast extract, and some fortified breakfast cereals.
