The term "enriched" on a label refers to the additional nutrients, considered essential to a balanced diet, which have been added. These include several components of the vitamin B complex: thiamine, riboflavin, niacin, and folic acid. In this case, niacin only has been added.

Vitamin B2, or riboflavin, is required to complete several reactions in the energy cycle. Reddening of the lips with cracks at the corners of the mouth, inflammation of the tongue, and a greasy, scaly inflammation of the skin are common symptoms of deficiency.Riboflavin (B2)- Classic riboflavin deficiency involves the lips, tongue, eyes, skin and nervous system. Vision changes, cheliosis (tiny lesions in the mouth or cracks in the corners of the mouth) tongue inflammation and discomfort eating or swallowing.

Folic acid is the synthetic form of the B vitamin folate. Folic acid is necessary for the synthesis of nucleic acids and the formation of red blood cells. Folic-acid deficiency most commonly causes folic-acid-deficiency anemia. Symptoms include gastrointestinal problems, such as sore tongue, cracks at the corners of the mouth, diarrhea, and ulceration of the stomach and intestines. Large doses of folic acid can cause convulsions and other nervous-system problems.

The Food and Drug Administration (FDA) regulations require enriched grain products to contain this essential vitamin.



Current studies have discovered a link between folic acid and brain function in older people. The study divided 818 people ages 50 to 75 to take either a vitamin containing 800 micrograms of folic acid a day, or a dummy pill, for three years.



On memory tests, the supplement users had scores comparable to people 5.5 years younger, Durga said. On tests of cognitive speed, the folic acid helped users perform as well as people 1.9 years younger.

Wheat flour is an excellent source of complex carbohydrates. Other than gluten flour, all types of wheat flour derive at least 80 percent of their calories from carbohydrates. Depending on the flour type, the percent of calories from protein ranges from 9 to 15 percent, except from gluten, which has a 45 percent protein content. Calories from fat are never more than 5 percent.

Classes used in the United States are

Hard wheats are harder to process and red wheats may need bleaching. Therefore, soft and white wheats usually command higher prices than hard and red wheats on the commodities market.



Wheat, in its natural unrefined state, features a host of important nutrients.



Therefore, to receive benefit from the wholesomeness of wheat it is important to choose wheat products made from whole wheat flour rather than those that are refined and stripped of their natural goodness.



The health benefits of wheat depend entirely on the form in which you eat it. These benefits will be few if you select wheat that has been processed into 60% extraction, bleached white flour. 60% extraction - the standard for most wheat products in the United States, including breads, noodles and pastas, baked goods like rolls or biscuits, and cookies - means that 40% of the original wheat grain was removed, and only 60% is left. Unfortunately, the 40% that gets removed includes the bran and the germ of the wheat grain - its most nutrient-rich parts. In the process of making 60% extraction flour, over half of the vitamin B1, B2, B3, E, folic acid, calcium, phosphorus, zinc, copper, iron, and fiber are lost.



Since 1941, laws in the United States have required "enrichment" of processed wheat flour with vitamins B1, B2, B3 and iron in response to the problems created by 60% extraction. Although not nearly as much of these B vitamins and iron are replaced as are removed from 60% extraction flour, "enriched" seems an odd word to describe this process. If you select 100% whole wheat products, however, the bran and the germ of the wheat will remain in your meals, and the health benefits will be impressive! Bran is made up of the outer layers of the wheat kernel. Bran is used in whole wheat flour. It is also used in breakfast cereals.



The germ is tiny - about 2 1/2% of the whole wheat kernel. The germ is the part that will sprout and grow into a new wheat plant if the kernel is planted. Wheat germ is sold in grocery stores and food markets. Whole wheat flour also contains wheat germ.

Whole-Wheat Flour - A coarse-textured flour ground from the entire wheat kernel. It contains the bran, germ and endosperm. The presence of bran reduces gluten development, so baked products made from whole-wheat flour tend to be heavier and denser than those made from white flour. In most recipes, whole-wheat flour can be mixed half-and-half with white flour.

Dried coconut meat, called copra, is pressed and used to make coconut oil, which is used in commercial frying and as a component in many packaged goods such as candies, margarines, soap and cosmetics. Canola is an oilseed crop which is grown primarily in regions of Western Canada. Each canola plant produces yellow flowers which, in turn, produce pods, similar in shape to pea pods but about 1/5th the size. Within the pods are tiny round seeds that are crushed to obtain canola oil. Each seed contains approximately 40 per cent oil. The remainder of the seed is processed into canola meal which is used as a high protein livestock feed.



Nutrition experts recognize canola oil as having the best fatty acid ratio. Research indicates the fatty acid composition of canola oil is most favourable in terms of health benefits and as part of a nutritionally balanced diet.

Triticale is the stabilized hybrid of wheat (Triticum) and rye (Secale). Poland, Germany, China, and France account for nearly 90 percent of world triticale production. Globally, triticale is used primarily for livestock feed. In Mexico, which grows the crop, triticale is used mostly for whole-grain tricale breads and tortillas. In the US, triticale is harvested mostly for forage, but there is a small market for pancake mixes and crackers due to a savory, nutty flavor. Ethanol plants will pay a premium for triticale over barley since it has more starch and no hull, making alcohol production more efficient. Although wheat-rye hybrids date back to 1875, it was only in 1953 that the first North American triticale breeding program was initiated, at the University of Manitoba.

Rye probably first grew wild in southwest Asia, but it was first cultivated in north and northwestern Europe, where it remains a staple food and the most common flour used for baking breads. Barley is a very important grain in the world today. It is very versatile in every way. It has been well adapted through its evolution. It has a very mysterious and much debated beginning. Now however, barely has become well known and so have its many uses. Barley, which is of the genus Hordeum, is a cereal that belongs to the grass family Poaceae. Barley has many different varieties. The most common is Hordeum vulgare, which is a six-rowed type of barley that has a spike notched on opposite sides with three spikelets on each notch. At each notch there is a flower or floret that later develops into a kernel. Hordeum distichum is a two-rowed type of barley that has central florets producing kernels and it has lateral florets that are sterile. Lastly there is Hordeum irregulare which has fertile central florets and different arrangements of sterile and fertile lateral florets.

Perhaps the most significant aspect of the introduction and cultivation of Kamut® wheat is that it is an important new crop for sustainable agriculture. Its ability to produce high quality grains without artificial fertilizers and pesticides makes it an excellent crop for organic farming.



Kamut® is grown in north-eastern and -central Montana and north-western North Dakota, USA; and Alberta and Saskatchewan, Canada. This grain is a summer wheat with a very large kernel. It has never been manipulated by modern agricultural techniques, which typically sacrifice taste and nutritious value for higher yields. Kamut® grain is best cultivated on fields that are not too rich in nutrients. Kamut® grain does not support humidity (not even dew), and its yields are lower compared to those of modern enhanced wheat.

Research by the IFAA (International Food Allergy Association) concludes as follows: “For most people who are hypersensitive to wheat, Kamut wheat can be an excellent substitute for common wheat”. Dr. Eileen Yoder, president of the IFAA, along with a team of independent scientists and doctors, arrived at this conclusion after their study with two groups of people, those with an immediate immune reaction and those with a delayed immune reaction. Many people think the terms food allergy and food intolerance mean the same thing; however, they do not. Do not confound wheat allergy and gluten intolerance! The first is a food allergy related to modern wheat, the latter is intolerance to gluten, present in amongst others wheat, rye, barley, spelt and also in Kamut grain. No research has been carried out yet on the reaction to Kamut grain by people who are intolerant to gluten. Therefore, we can make no recommendations for them. However, for many with wheat allergies, Kamut brand grain has become ‘the wheat you can eat’.

The millets are a group of small-seeded species of cereal crops or grains, widely grown around the world for food and fodder. They do not form a taxonomic group, but rather a functional or agronomic one. Their essential similarities are that they are small-seeded grasses grown in difficult production environments such as those at risk of drought. They have been in cultivation in East Asia for the last 10,000 years.



The millets include species in several genera, mostly in the subfamily Panicoideae, of the grass family Poaceae. Of the major and minor millets (not including those plants sometimes called millet) all of the species are in the tribe Paniceae of the subfamily Panicoideae except for finger millet. Although new to North Americans, Quinoa (pronounced ‘keenwa’) has been cultivated in the highest continuously farmed region of the earth, the South American Andes, since at least 3,000 B.C. The ancient Incas called it ‘the mother grain' and revered it as sacred. Compared to other grains and vegetables, it is high in protein, calcium, and iron. One researcher has said that "while no single food can supply all of the essential life sustaining nutrients, it comes as close as any other in the vegetable or animal kingdoms."



This amazing ancient food is now in the process of being rediscovered by modern peoples. In South America, a renewed respect for indigenous crops and traditional foods has reversed a 400-year decline in quinoa production that began with the Spanish conquest. Quinoa is a small seed that in size, shape, and color looks like a cross between sesame seed and millet. It is disk shaped with a flattened or depressed equatorial band around it’s periphery. It is usually a pale yellow color but some species may vary from almost white through pink, orange, or red to purple and black. Quinoa is not a true cereal grain but is technically a fruit of the Chenopodium family. Chenopodium plants have characteristic leaves shaped like a goose foot. The genus also includes our common weed, lamb’s quarters. Quinoa is an annual herb that grows from three to six feet high, and like millet its seeds are in large clusters at the end of the stalk.



The seeds are covered with saponin, a resin-like substance that is extremely bitter and forms a soapy solution in water. To be edible, the saponin must be removed. Traditionally, saponin has been removed by laboriously hand scrubbing the quinoa in alkaline water.



The edible seed of the quinoa plant has been called both a pseudo-cereal and a pseudo-oilseed because of it’s unique nutritional profile. It is high in protein compared to other grains, although it is also high in oil and fat.



Some wheats come close to matching quinoa’s protein content, but cereals such as barley, corn, and rice generally have less than half the protein of quinoa. Also, quinoa has a good balance of the amino acids that make up the protein. Quinoa, like soybeans, is exceptionally high in lysine, an amino acid not overly abundant in the vegetable kingdom. Quinoa is also a good complement for legumes, which are often low in Methionine and Cystine. In addition, quinoa is a relatively good source of phosphorous, calcium, iron, vitamin E, and several of the B vitamins.

Also known as bicarbonate of soda, baking soda is used as a LEAVENER in baked goods. When combined with an acid ingredient such as buttermilk, yogurt or molasses, baking soda produces carbon dioxide gas bubbles, thereby causing a dough or batter to rise. Because it reacts immediately when moistened, it should always be mixed with the other dry ingredients before adding any liquid; the resulting batter should be placed in the oven immediately. At one time, baking soda was used in the cooking water of green vegetables to preserve their color. That practice was discontinued, however, when it was discovered that baking soda destroys the vitamin C content of vegetables.

Salt is one of the most ubiquitous food ingredients around. Those who think of salt only as something used to perk up flavor might wonder what could possibly give this ingredient the level of importance it has gained through the ages. Besides enhancing taste, salt has several other functions in food products. It acts as an antimicrobial or microbiological control agent. It contributes to certain chemical reactions that create a wide variety of food characteristics.



Sometimes the terms "salt" and "sodium" are used interchangeably, but technically this is not correct. "Salt" is sodium chloride. By weight, it is 40 percent sodium and 60 percent chloride.

Because of sodium's importance to your body, the excretory and nervous systems guard against under-consumption of salt, which is a threat to your body's nerves and muscles. There are many different types of caramel color, each engineered to serve a particular purpose in food chemistry. They are all based on the cooking of sugars and starches. Caramel color is a colloid, a mixture in which solid particles are suspended in water. The particles in colloids have electric charges that keep the particles from clumping together and settling out of solution. The charges can be positive or negative. If a negative coloid is added to a product that has positive colloidal particles in it, the two will attract one another and clump up, making the product cloudy.



Caramel color can be made with either positively or negatively charged particles. This allows manufacturers to use negative colloidal caramel in acidic soft drinks, and positive in beers and soy sauces. Beer has positively charged proteins suspended in it, and soy sauce has a high salt content that requires the more salt-tolerant positive caramel color.



Caramel color is an emulsifying agent as well as a colorant. In soft drinks, it helps keep the flavor oils suspended in the solution.



In chocolate milk, the muddy color of caramel is darkened by the addition of FD&C Red #40 to give what the industry refers to as a "Dutch" chocolate shade. Blues and yellows are sometimes used to give a more brown color.



Caramel color is added to baked goods, to poultry, to milk to give an "eggnog" color, to malt vinegars, canned meats, syrups, and soups, stews, and gravies.



If caramel color is made in North America it is likely to be gluten-free.



The problem with caramel color is that it may or may not contain gluten depending on how it is manufactured. In the USA caramel color must conform with the FDA standard of identity from 21CFR CH.1. This statute says: "the color additive caramel is the dark-brown liquid or solid material resulting from the carefully controlled heat treatment of the following food-grade carbohydrates: Dextrose (corn sugar), invert sugar, lactose (milk sugar), malt syrup (usually from barley malt), molasses (from cane), starch hydrolysates and fractions thereof (can include wheat), sucrose (cane or beet)." Also, acids, alkalis and salts are listed as additives which may be employed to assist the caramelization process.

Soy Protein Hydrolyzed

Hydrolyzed soy protein is a highly processed soy byproduct that is used as a flavor enhancer. The hydrolysis method is done by boiling the soy in acid and neutralizing it with caustic soda. The residue after the process is finished is soy protein and excitotoxic amino acids such as glutamate. See Monosodium Glutamate (MSG). Because of the amount of glutamate in the hydrolyzed soy protein, manufacturers use it exactly as MSG but are not required to put “MSG” under their labeling. Hydrolyzed soy protein is also used in cosmetics and personal care products such as hair conditioner, hair dyes, lotion, skin care products, and mascara. In addition, it can also be a component in paper and paper board. People with soy allergies must be careful with the labeling because it is the proteins in the soy that they are intolerant of. Their bodies do not recognize the soy protein as safe and will result in the production of histamine. Histamine is the main hormone released as an inflammatory response. The allergic reaction will trigger inflammation of soft tissue such as lungs and sinuses. The Food and Drug Administration (FDA) has considered soy protein as an indirect food additive and is Generally Recognized As Safe (GRAS).
