Like most beans, kidney beans are rich in the best sort of fiber - soluble fiber - which helps to eliminate cholesterol from the body. They are a good source of folate, potassium, iron, manganese, copper and zinc. As a high-potassium, low-sodium food they help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein. Kidney beans also contain protease inhibitors which frustrate the development of cancerous cells.

The small, white navy bean, also called pea bean or haricot, is particularly popular in Britain and the US, featured in such dishes as baked beans and even pies, as well as in various soups such as the famous Senate Bean Soup.[8]

Other white beans are Cannellini (a quite popular variety in Central and Southern Italy) and Great Northern.

Before they are eaten, the raw beans must be boiled for at least ten minutes to degrade a toxic compound - the lectin phytohaemagglutinin - found in the bean which would otherwise cause severe gastric upset.

Similarly to other beans, the common bean is high in starch, protein and dietary fiber and an excellent source of iron, potassium, selenium, molybdenum, thiamine, vitamin B6, and folate.



It is the most common bean in the United States and northwestern Mexico, and is most often eaten whole in broth or mashed and refried. Either whole or mashed, it is a common filling for burritos.

They are believed to have originated in Guatemala and Southern Mexico and were traded along routes that led into North America, and eventually were carried to Europe, Asia, and Africa.

BLACK BEAN -- Also known as turtle beans, black beans are highly important to the various cuisines of Latin America and the Caribbean. These small, jet-black beans come to market dried, packaged in plastic bags or sold in bulk. Use within one year of purchase. Cooked black beans are also available canned in some parts of the country. They have an earthy, meaty flavor and a mealy texture. Black beans are used in soups, stews, salads, and bean dips. They go well with pork, rice and greens.

The lentil or daal or dal (Lens culinaris), considered a type of pulse, is a bushy annual plant of the legume family, grown for its lens-shaped seeds. It is about 15 inches (38 cm) tall and the seeds grow in pods, usually with two seeds in each.



The plant likely originated in the Near East[1] , and has been part of the human diet since the aceramic (non-pottery producing) Neolithic times, being one of the first crops domesticated in the Near East. With 26% protein, lentils have the third-highest level of protein, by weight, of any plant-based food after soybeans and hemp, and is an important part of the diet in many parts of the world, especially in the Indian subcontinent which has large vegetarian populations.



A variety of lentils exists with colors that range from yellow to red-orange to green, brown and black. Red, white and yellow lentils are decorticated, i.e., they have their skins removed. There are large and small varieties of many lentils (e.g., Masoor Lentils). Lentils are sold in many forms, with or without the skins, whole or split.



Culturally, other pulses are sometimes called lentils but are actually beans or peas, e.g. "black lentils" (urad beans).

The black-eyed pea, also called black-eyed bean, blackeye, field peas, lobiya, rongi or chawli, is a subspecies of the cowpea, grown for its medium-sized edible bean, which mutates easily giving rise to a number of varieties, the common commercial one called the California Blackeye being pale-colored with a prominent black spot.



Originally native to Africa, but widely grown in Asia and still grown for food in many countries there, including India, as well as Africa, the black-eyed pea was introduced into the West Indies and from there to the U.S. Southern states, where it is still often used in soul food and Southern U.S. cuisine. The crop was promoted by George Washington Carver, both for its nutritional value and because, as a legume, it added nitrogen to the soil.



Black-eyed peas are an excellent source of Calcium (211mg in a 1 cup serving), Folate (209mcg), and Vitamin A (1,305 IU).

Legumes or Pulses are the edible seed of certain leguminous plants like chickpeas, beans, LENTILS, peas and split peas Legumes are wonder foods as they are low in fat and absorb the flavor of spices and herbs, making them fun and tasty to eat. People have been eating legumes for thousands of years and these foods are the main source of protein for people in many cultures all over the world.



Beans and other legumes have all the nutrients now recognized as important in preventing heart disease, cancer and obesity. They are high in complex carbohydrates, protein and fiber and they are extremely low in fat.

Ribose, primarily occurring as D-ribose, is an organic compound that occurs widely in nature. It is an aldopentose, that is a monosaccharide containing five carbon atoms that, in its acyclic form, has an aldehyde functional group at one end. Typically, this species exists in the cyclic form, as depicted in the upper right. It was first reported in 1891 by Emil Fischer. It comprises the backbone of RNA, a biopolymer that is the basis of genetic transcription. It is related to deoxyribose, as found in DNA, by the removal of one hydroxy group. Once phosphorylated, ribose can become a subunit of ATP, NADH, and several other compounds that are critical to metabolism.



D-ribose is often marketed as a supplement for bodybuilders with a common recommended daily dose being 5 g, even though most studies have found no evidence that it is helpful for endurance, recovery or increasing muscle mass in healthy people.[citation needed]



D-ribose has also been used to reduce fatigue in fibromyalgia and chronic fatigue syndrome. A 2006 pilot study concluded that D-ribose (5 g three times a day) was effective in the treatment of FM and CFS. [2] Although this study lacked any control group, the authors reported that 66% of the 41 participants found the supplement helpful and it produced improvement in all the areas tested: energy, sleep, mental clarity, pain intensity, and well-being. Without further study, it is unclear if this is a substantial effect, or a placebo effect. In addition, there is no transporter or uptake mechanism for ribose in the intestine. The energy yield comes from two- and three-carbon compounds created when ribose is fermented by intestinal bacteria

Peas are grown for either their edible seeds or pods. Garden or English peas, grown for their seeds, are harvested as soon as the pods are well-filled but the seeds are still tender and sweet. When small and tender, these peas can be eaten raw in salads. For cooking, shell them just before using and cook immediately.



Some suggested garden pea cultivars are Little Marvel, Thomas Laxton, Wando, Freezonian, Frosty, Knight, Alderman (tall-growing), Sparkle and Green Arrow.



Snow peas or sugar peas have edible flat pods and very small seeds. They should be picked when very young, just as the seeds start to form. If not picked at this stage, they can be shelled and eaten as garden peas, but are more starchy and not as sweet.



Commonly grown cultivars of snow peas include Mammoth Melting Sugar, Dwarf Grey Sugar, and Oregon Sugar Pod.

Green garden peas are a valuable source of protein, iron and insoluble fiber. Insoluble fiber helps to reduce serum cholesterol thus reducing the risk of heart disease and stroke. Sugar snap peas and the like, contain much less protein, but they are an excellent source of iron and vitamin C that work to keep your immune system functioning properly.

Barley is a very important grain in the world today. It is very versatile in every way. It has been well adapted through its evolution. It has a very mysterious and much debated beginning. Now however, barely has become well known and so have its many uses. Barley, which is of the genus Hordeum, is a cereal that belongs to the grass family Poaceae. Barley has many different varieties. The most common is Hordeum vulgare, which is a six-rowed type of barley that has a spike notched on opposite sides with three spikelets on each notch. At each notch there is a flower or floret that later develops into a kernel. Hordeum distichum is a two-rowed type of barley that has central florets producing kernels and it has lateral florets that are sterile. Lastly there is Hordeum irregulare which has fertile central florets and different arrangements of sterile and fertile lateral florets.
