The fields of application of pure potato starch and its derivatives are extremely wide and varied. Canola is an oilseed crop which is grown primarily in regions of Western Canada. Each canola plant produces yellow flowers which, in turn, produce pods, similar in shape to pea pods but about 1/5th the size. Within the pods are tiny round seeds that are crushed to obtain canola oil. Each seed contains approximately 40 per cent oil. The remainder of the seed is processed into canola meal which is used as a high protein livestock feed.



Nutrition experts recognize canola oil as having the best fatty acid ratio. Research indicates the fatty acid composition of canola oil is most favourable in terms of health benefits and as part of a nutritionally balanced diet.

By removing free fatty acids and phospholipids from crude corn oil, the oil refining process gives corn oil one of the qualities consumers value most: its excellent frying quality and resistance to smoking or discoloration. It also has a pleasant taste, resists developing off-flavors and offers high levels of polyunsaturated, instead of saturated fats.



Studies using typical American foods have found that no vegetable oil is more effective than corn oil in lowering blood cholesterol levels.

At the core of the starchy substance and toward the pointy end of the kernel is the germ. The germ contains a small amount of oil. If you cut a popcorn kernel in half, you can see the husk, starch and germ. If you cut out the tiny piece of germ and squeeze the germ, you will see the oil.

The meat of the chicken, is also called "chicken." Chicken is a type of poultry. Because of its relatively low cost among meats, chicken is one of the most used meats in the world. We do need some fat in our diet. Fat plays a role in the development of shiny hair, healthy skin, cells, and tissue, our cushioned internal organs, and the layer of insulation under our skin that keeps us warm.



Fats contain both saturated and unsaturated (monounsaturated and polyunsaturated) fatty acids. Saturated fat raises blood cholesterol more than other forms of fat. Reducing saturated fat to less than 10 percent of calories will help you lower your blood cholesterol level. A person on a diet of 2,000 calories per day should consume fewer than 22 grams of saturated fat per day. A skinless chicken breast has 1 only gram of saturated fat, so it is an ideal choice for anyone limiting his or her intake of saturated fat.



Unsaturated fats include monounsaturated and polyunsaturated kinds. Both kinds of unsaturated fats reduce blood cholesterol when they replace saturated fats in the diet, so they are called the “good” fats. Polyunsaturated fat are found in from vegetable and fish oils and monounsaturated fats are found in olive, canola, or peanut oils.

While Disodium dihydrogen pyrophosphate sounds like a very suspicious additive, in fact it is very harmless and acts in the product as a sequestrant, which means that it binds to minerals in the food, such as iron, to prevent discoloration. Anyone who has cut a potato and, therefore, exposed it to air, has seen the graying of the exposed potato. A sequestrant such as disodium dihydrogen pyrophosphate stops this type of discoloration. Citric acid, another more familiar ingredient, is another example of a sequestrant and can often be used instead of disodium dihydrogen pyrophosphate.

Also called corn sugar and grape sugar, dextrose is a naturally occurring form of GLUCOSE.



GLUCOSE: The most common form of this sugar is dextroglucose, a naturally occurring form commonly referred to as DEXTROSE (also called corn sugar and grape sugar). This form of glucose has many sources including grape juice, certain vegetables and honey. It has about half the sweetening power of regular sugar. Because it doesn't crystallize easily, it's used to make commercial candies and frostings, as well as in baked goods, soft drinks and other processed foods. Corn syrup is a form of glucose made from cornstarch.

TBHQ

Tertiary Butylhydroquinone (TBHQ) is an antioxidant approved by the Food and Drug Administration as a preservative. TBHQ is derived from animals and in fats or oils. It is most commonly found in fast foods, crackers, and chips. However, TBHQ is also used in pet foods, cosmetics, baby skin care products, varnish, lacquers, and resins. The purpose of using TBHQ is to stabilize possibly explosive compounds. The Food and Drug Administration (FDA) put a limit of .02% maximum of TBHQ in the food product. Ingestion of 5 grams can cause death, while only 1 gram can cause alarming symptoms such as nausea, vomiting, tinnitus (ringing in the ears), delirium, etc. TBHQ is butane based, a main component of lighter fluid.

Food preservative used during processing; prolong shelf life, improve food taste? Additives, simple substances like salt, sugar, artificial chemicals used as antioxidant, anti-microbial, artificial colors for better eye appeal. Currently there are over 3000 additives used in processing that have a variety of functions.



These substances in foods can affect individuals who are sensitive with some type of allergy, asthma, hay fever, etc. Few of these can affect non-allergic people as well. Some substances can cause more reactions than others can. For example, a response to sulfur dioxide and sodium benzoate occurs more commonly in asthmatics than a response to the color tartrazine.



Some feel these responses are not true allergies as one sees but more as a chemical response. Reactions depend on the types of food preservatives used or additive ingested. These may include vomiting, rashes, hives, a tight chest, headaches, worsening of eczema, and many other symptoms. Similar reactions may occur with an allergy to a food such as egg, nuts, etc.



Some edibles have natural elements that may affect you too. For example, fish that is not fresh may have a high level or histamine, cheese may have tyramine, and you may react to the histamine in wine and not the sulfur dioxide!



Antioxidant stop fats and oils from going rancid; for instance, ascorbic acid in butter. BHA and the related compound butylate hydroxy toluene have been used for years, mostly in products that are high in fats and oils and as a preservative for dry types, such as cereals. They slow the development of off-flavors, odors, and color changes caused by oxidation. Some report problems of rashes, hives, and occasionally tight chests. Studies show this to cause tumors in fish, hamsters, mice and rats.

A colorless, crystalline organic compound belonging to the family of carboxylic acids, present in practically all plants and in many animal tissues and fluids. It is one of a series of compounds involved in the physiological oxidation of fats, proteins, and carbohydrates to carbon dioxide and water.



First isolated from lemon juice by a Swedish chemist, Carl Wilhelm Scheele, in 1784, citric acid is manufactured by fermentation of cane sugar or molasses in the presence of a fungus, Aspergillus niger. It is used in confections and soft drinks (as a flavoring agent), in metal-cleaning compositions, and in improving the stability of foods and other organic substances (by suppressing the deleterious action of dissolved metal salts)."



Citrus fruits are notable for their fragrance, and most are juice-laden. They contain a high proportion of citric acid giving them their characteristic astringent odour and flavour. They are also good sources of vitamin C. Some brands of Citric Acid may be made from wheat, however this is very rare.

"The term natural flavor or natural flavoring means the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating or enzymolysis, which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional."

The new labeling law effective in 2006, The Food Allergen Labeling and Consumer Protection Act (FALCPA), requires manufacturers to declare if one or more of the 8 major food allergens are contained in a natural flavoring. The top 8 major food allergens are defined as: milk, egg, fish, crustacean shellfish, tree nuts, wheat, peanuts and soybeans.

If you are managing food allergies other than the top 8 major food allergens, however, the new law will not be of assistance to you in identifying the sources in any natural flavoring stated on a label.

The FDA does not require companies to disclose ingredients of color or flavor additives so long as all the chemicals in them are considered by the agency to be GRAS ("generally recognized as safe") enabling companies to maintain secrecy of formulas. It also hides the fact that flavors often contain more ingredients than the foods to which they give taste.

A typical artificial strawberry flavor contains over 30 chemicals. According to manufacturer safety data sheets those chemicals cause eye irritation, corneal damage, eye burns, skin irritation, severe / permanent damage to digestive tract, gastrointestinal irritation, gastrointestinal tract burns, CNS depression, neurological effects, liver abnormalities, cardiac abnormalities, or other harm.

Natural flavor, according to the FDA, must be derived entirely from natural sources (herbs, spices, fruits, vegetables, beef, chicken, yeast, bark, roots, etc). Consumers prefer to see natural flavors on a label out of a belief they are more healthful.

Natural flavor is not necessarily more healthful or purer than an artificial flavor. Almond flavor when derived from natural sources may contain traces of hydrogen cyanide, a deadly poison. When derived by mixing oil of clove & amyl acetate, it does not. Natural flavors and artificial flavors are often manufactured at same chemical plants.

Flavor manufacturing may also involve biotechnology, using enzyme reactions, fermentation, & fungal and tissue cultures. Flavors created by these methods are considered natural flavors by the FDA.

In addition to flavor chemicals also think about genetic engineering of food, DNA or gene alteration, and medicines and hormones given to cows, cattle, hogs, and chickens. What affect does it have upon us? Some are suspected causes of cancer or other problems.

When a natural flavor or artificial flavor is added to a food or drink the resultant processed food is no longer natural & is potentially harmful.

Polydimethylsiloxane (PDMS) is the most widely used silicon-based organic polymer, and is particularly known for its unusual rheological (or flow) properties. It is optically clear, and is generally considered to be inert, non-toxic and non-flammable. PDMS has been assigned CAS number 63148-62-9, and is occasionally called dimethicone. It is one of several types of silicone oil.



Many people are indirectly familiar with PDMS because it is the primary component in Silly Putty, to which PDMS imparts its characteristic viscoelastic properties. The rubbery, vinegary-smelling silicone caulks, adhesives, and aquarium sealants are also well-known. PDMS is also used as a component in silicone grease and other silicone based lubricants, as well as in defoaming agents, damping fluids, heat transfer fluids, cosmetics, hair conditioner and other applications. PDMS has also been used as a filler fluid in breast implants, although this practice has decreased somewhat, due to safety concerns. It continues to be used in knuckle replacement implants, with good results.



Activated dimethicone, a mixture of polydimethylsiloxanes and silicon dioxide (sometimes called simethicone), is used in over-the-counter drug as an anti-foaming agent and carminative.



As a food additive, it has the E number E900 and is used as an anti-foaming agent and an anti-caking agent.
