Sodium Nitrate (Nitrite)

Sodium Nitrate and Sodium Nitrite are both salts used as preservatives in processed meats. Sodium Nitrate, NaNO3, is used as a food preservative because of its anti-microbial properties so food stays fresher longer. It is also used broadly as a fertilizer and in the late 19th century was used in the manufacturing of gunpowder. There is controversy of its use because it can produce nitrosamines, which cause cancer, when food with sodium nitrate is cooked at high heat. Sodium Nitrite, NaNO2 , is chemically similar to Sodium Nitrate, and is used to sustain coloring and preserve freshness in meats and fish. Without the coloring, hot dogs would get a grayer color over time. Sodium Nitrite is also found in dyeing, printing, and bleaching textile fabrics, coating metals, and manufacturing rubber chemicals. Over-consumption of sodium nitrate can increase the risk of pancreatic cancer. Nitrates are naturally occuring in cauliflower, spinach, and other vegetables as well.

BHA

Butylated hydroxyanisole (BHA) is used as an antioxidant to prevent fats and oils from becoming rancid. BHA and BHT can be found in butter, meats, chewing gum, dehydrated potatoes, and beer. To be Generally Recognized As Safe (GRAS) by the Food and Drug Administration (FDA), the food product must have at maximum .02% of BHA to be considered safe. BHA is a known carcinogen in rats, mice, and hamsters. However, the cancer developed from cells in the forestomach in the rodents that humans do not have. BHA did not cause tumors to develop in dogs, pigs, and monkeys tested who do not have forestomachs. Although the true effects of BHA on the human body is not known, BHA is not a stable compound and people are at risk for triggering a reaction upon consumption.

BHT

Butylated Hydroxy Toulene (BHT) is used as an antioxidant to retard the rancidity of oil and fats in foods. With emulsifying and stabilizing agents, BHT is a preservative to help maintain the appearance of freshness and consistency of food. BHT is a fat-soluble white crystalline solid that was approved as a food additive and preservative by the U.S. Food and Drug Administration in 1954. There is no taste to the additive. It is a Generally Recognized As Safe (GRAS) additive and with no scientific data proving its carcinogenicity, whether it causes cancer.

Pearl onions

Also known as button or baby onions, these are larger than pickling onions and have a sweet, delicate flavour.

Uses: Add whole to stews and casseroles or cook them very gently in a little butter and a splash of balsamic vinegar for 20-30 minutes until tender, serve with roasted meat.



Pickling onions

These are maincrop onions, picked when they are still small. Available only in the autumn, they have a strong, pungent flavour.

Seasonal availability: September to November.

Uses: Preserve them in vinegar, leave to mature and enjoy them with cheese and cold meats. They can also be added whole to casseroles in place of shallots or standard onions.

To store: Store in a dark, cool, airy place.

To prepare: Chop off the neck and just a little of the base to help the onion stay together. Score a line down the side of the onion and peel away the outer skin and first layer of flesh. To make peeling easier, soak the onions in warm water to soften the skins.



Red onions

Red onions have a mild sweet flavour and an attractive colour.

Uses: As a garnish or combine with tomatoes and red leaf lettuce for a colourful salad, or include in homemade chutneys to serve with cheese and cold meats. Try them quartered and roasted in olive oil.

Seasonal availability: All year, English from October to April.

To store: Store in a dark, cool, airy place.

To prepare: Cut the neck and base away, then score down the side of the onion and remove the skin and first layer of flesh. To help hold back the tears during preparation, chill the onion first for 30 minutes and always remove the root end last. The root contains the largest concentration of sulphuric compounds which make the eyes water.



Shallots

These are not baby onions (as pickling onions are) but a close relation of the onion. They have a mild, delicate flavour which is less overpowering than most onions so do try to use shallots where a recipe specifies if possible. Shallots grow in a similar way to garlic - when you peel one there may be two or three held together at the root.

Seasonal availability: All year.

Uses: Use in recipes where a small amount of onion is used or where a subtle onion flavour is needed. They are often included in rich, creamy sauces where just a hint of onion flavour is needed.

To store: Keep in a cool, dry place.

To prepare: Top and tail shallots and then peel the outer skin away. If there are several bulbs, pull them apart and then slice.



Spanish onions

Onions grown in warm climates are milder than those from cooler regions, consequently Spanish onions have a mild, sweet flavour. Their skins are a rich golden colour and they are one of the largest varieties available.

Seasonal availability: All year.

Uses: Serve raw in salads, stuff and bake them or add to any savoury dish where a subtle onion flavour is required.

To store: Store in a dark, cool, airy place.

Rennet and Coagulating Enzymes

What are coagulating enzymes and how do they create cheese?

In order for milk to coagulate and eventually become cheese, enzymes must be added to breakdown the proteins that keep milk a liquid. Some enzymes do this better than others, but all of these enzymes are in the protein breaking subclass known as proteases. The best proteases or coagulants for making cheese are the type that break a specific protein called kappa casein. When the kappa casein is broken the milk loses its liquid infrastructure and begins to coagulate.



What are Rennet, Rennin, and Chymosin?

Rennet is defined in Webster's Unabridged Dictionary as "the lining membrane of the fourth stomach of the calf (and/or) a preparation or extract of the rennet membrane, used to curdle milk, as in making cheese…." Rennet is also used broadly to describe any enzyme used for the coagulation of milk in the process of making cheese.



Rennin is defined as "a coagulating enzyme occurring in the gastric juice of the calf, forming the active principal of rennet and able to curdle milk." The cheese industry uses a broader definition of the term rennin, referring to it as "any enzyme used for the controlled coagulation of milk."



Chymosin, often used as another word for rennin, is the most common enzyme recovered from rennet.

Partially hydrogenated vegetable oil is commonly used in frying, baking, or in some cases coffee whitening. Usually fats like margarine, shortening, or other baked or fried foods contain partially hydrogenated vegetable oil. Partial hydrogenation of the vegetable oil allows the oil to take on a stiffer texture because of the hydrogen gas being pumped into the oil to weaken the hydrogen bonds in the structure. Partially hydrogenation of oil is therefore unhealthier to the consumer because of its unnatural use of hydrogenation which forms trans-fats that the body cannot breakdown. Trans-fats are solid fats produced from oil by unnatural methods and interfere with metabolic processes such as increasing LDL or “bad cholesterol.” Partially hydrogenated oils have a tendency to be used by food companies because of its cheapness, stability, improved texture, and ability to oxidize to provide a longer shelf life. Two types of mozzarella are produced in the USA. Low moisture mozzarella that has a moisture content of less than 50% and high moisture mozzarella that contains more than 52% moisture. Soft Red Winter (SRW) is grown in the eastern third of the United States. SRW is a high yielding wheat, but relatively low in protein, usually about 10%. SRW is used for cakes, pastries, flat breads, crackers and snack foods. This fall-seeded wheat comprises about fourteen percent of U.S. wheat exports. There are no subclasses of this class.



Durum, the hardest of all U.S. wheats, provides semolina for spaghetti, macaroni and other pasta products. This spring-seeded wheat is grown primarily in the same northern areas as hard red spring, while smaller winter-sown quantities are grown in Arizona and California. Durum comprises nearly five percent of total U.S. wheat exports. Subclasses are hard amber durum, amber durum and durum.

Rotini is a type of helix- or corkscrew-shaped pasta. The name derives from the Italian for twists. It is related to fusilli, but has a tighter helix, i.e. with a smaller pitch. It should not be confused with rotelle ("wagon wheel" pasta).



Rotini originated from Northern Italy and the tight twists help them retain a wide variety of sauces better. They are often used in pasta salads with pesto or tomato-based sauces.



Rotini is most often made from refined (white) wheat flour, although varieties made from whole wheat flour, brown rice, or other grains are also available.
