Have you heard that whole grains may help reduce the risk of heart disease and certain cancers? Whole grains are made up of all parts of the grain--the bran (or fiber-rich outer layer), the endosperm (middle part) and the germ (the nutrient-rich inner part). When grains are milled, or refined, the bran and germ portions are removed, leaving only the endosperm. By contrast, whole grain foods contain all three layers of the grain. When you eat a variety of whole grain foods, you get the nutritional benefits of the entire grain. Whole grains contain many other natural plant compounds called phytochemicals. Scientists believe phytochemicals in whole grains, together with the vitamins, minerals, and dietary fiber, may contribute to whole grains health benefits.

Canola oil [kan-OH-luh] "The market name for rapeseed oil which, as might be assumed from the name, is expressed from rape seeds. For obvious reasons, the name was changed to canola by the Canadian seed-oil industry. Canola is, in fact, Canada's most widely used oil. It's commonly referred to there as lear oil, for "low erucic acid rapeseed" oil. The popularity of canola oil is rising fast in the United States, probably because it's been discovered to be lower in saturated fat (about 6 percent) than any other oil. This compares to the saturated fat content of peanut oil (about 18 percent) and palm oil (at an incredibly high 79 percent). Another canola oil selling point is that it contains more cholesterol-balancing monounsaturated fat than any oil except olive oil. It also has the distinction of containing Omega-3 fatty acids, the wonder polyunsaturated fat reputed to not only lower both cholesterol and triglycerides, but to contribute to brain growth and development as well. Cold Extraction Methods

Cold Pressed Cold pressing refers to oils obtained through pressing and grinding fruit or seeds with the use of heavy granite millstones or modern stainless steel presses, which are found in large commercial operations. Although pressing and grinding produces heat through friction, the temperature must not rise above 120ºF for any oil to be considered cold pressed. The maximum temperature for cold pressed olive oil is somewhat lower. Olive, sesame, peanut, and sunflower are among the oils obtained from cold pressing. (Highly refined versions of these oils are also produced.) Cold pressed oils retain all of their flavor, aroma, and nutritional value.

Vacuum Extraction Vacuum extraction is another method of cold extraction that produces oils with an expeller process. The process occurs in an atmosphere with no oxygen or light. The temperature during the expeller process may be as low as 70ºF.

Heat Extraction Methods

Expeller Pressed Expeller pressing is like cold pressing except that extreme pressure is added during the pressing. As much pressure as 15 tons per square inch is used to squeeze the oil from the fruit or seeds. The high pressure also produces high heat (as high as 300ºF ) through friction, so the oils produced with the expeller process cannot be considered cold pressed. The oils obtained with this method retain much their flavor, aroma, and nutritional value, but not to the extent of cold pressed oils.

Solvent Extraction Chemical solvents are used to extract oil, which is then boiled to eliminate most of the solvents. Further refining such as bleaching, deodorizing, and heating to high temperatures cleanses the oil, resulting in a product that has very little of the original flavor, aroma, or nutrients contained in the seeds or fruit before processing. Most of the oils produced with this method have a high smoke point and a long shelf life.

The almond that we think of as a nut is technically the seed of the fruit of the almond tree, a glorious medium-size tree that bears fragrant pink and white flowers. Like its cousins, the peach, cherry and apricot trees, the almond tree bears fruits with stone-like seeds (or pits) within. The seed of the almond fruit is what we refer to as the almond nut.



Almonds are off-white in color, covered by a thin brownish skin, and encased in a hard shell. Almonds are classified into two categories: sweet (Prunus amygdalu var. dulcis) and bitter (Prunus amygdalu var. amara).



Sweet almonds are the type that are eaten. They are oval in shape, usually malleable in texture and wonderfully buttery in taste. They are available in the market either still in their shell or with their shell removed. Shelled almonds are available whole, sliced or slivered in either their natural form, with their skin, or blanched, with their skin removed.



Bitter almonds are used to make almond oil that is used as a flavoring agent for foods and liqueurs such as Amaretto. They are otherwise inedible as they naturally contain toxic substances such as hydrocyanic acid. These compounds are removed in the manufacturing of almond oil.



A high-fat food that's good for your health? That's not an oxymoron, its almonds. Almonds are high in monounsaturated fats, the same type of health-promoting fats as are found in olive oil, which have been associated with reduced risk of heart disease. Five large human epidemiological studies, including the Nurses Health Study, the Iowa Health Study, the Adventist Health Study and the Physicians Health Study, all found that nut consumption is linked to a lower risk for heart disease. Researchers who studied data from the Nurses Health Study estimated that substituting nuts for an equivalent amount of carbohydrate in an average diet resulted in a 30% reduction in heart disease risk. Researchers calculated even more impressive risk reduction--45%--when fat from nuts was substituted for saturated fats (found primarily found in meat and dairy products).



In addition to their cholesterol-lowering effects, almonds' ability to reduce heart disease risk may also be partly due to the antioxidant action of the vitamin E found in the almonds, as well as to the LDL-lowering effect of almonds' monounsaturated fats. (LDL is the form of cholesterol that has been linked to atherosclerosis and heart disease). When almonds are substituted for more traditional fats in human feeding trials, LDL cholesterol can be reduced from 8 to 12%.

We get our energy from the nutrients in food. The main sources of energy are carbohydrates (starches and sugars), fats and proteins. The body can be compared to an engine that converts the energy in food into the energy we need to live. Sugars and starches are forms of carbohydrate. The coconut, one of the most important cultivated trees in the world, is Cocos nucifera of the palm family, Palmaceae. Only the one species is in this genus.

"Descriptive features are: (1) the slender often leaning trunk, enlarged at base, ringed above and 8 to 12 inches in diameter; (2) many pinnate (feathery) leaves 12 to 20 feet long with basal sheath of coarse brown fibers, long petiole (stem) and numerous very narrow shiny yellow-green segments (pinnae or leaflets) spreading regularly in one plane on both sides of axis; (3) numerous whitish or pale yellow male and female flowers in branched flower clusters at leaf bases; and (4) fruit, the familiar coconut, egg-shaped or elliptic, consisting of a light brown fibrous husk 8 to 12 inches long, a hard shell and one very large hollow seed with whitish, oily edible flesh) "What we call the meat of the coconut is really food for the developing embryo and is technically called the endosperm. In the young fruit this is a liquid but it gradually becomes firm, and by nine months the meat is at its greatest thickness,The fruit botanically is not a nut but a drupe.



The bluntly 3-angled husk is 3/4 to 1-1/2 inches thick. It does not split open spontaneously as some fruits do. The meat is about 3/8 inch thick. The large central cavity contains a watery or milky liquid often called coconut milk or coconut water. It is one of the largest seeds known, surpassed only by the 1-seeded, 2-lobed fruit of the double-coconut (Lodoicea maldivica), a tall fan palm of the Seychelles islands in the Indian Ocean. L. maldivica produces fruit weighing up to 50 pounds.

The coconut palm is medium sized, usually 30 to 60 feet, sometimes as tall as 80 feet. "The slender trunk is enlarged to 16 to 20 inches in diameter at base, often slightly inclined there, and may be leaning as a result of the constant coastal breeze or after partial uprooting by a hurricane. The gray or brown trunk is lightly cracked. At the apex is the relatively broad evergreen growth of alternate, erect, spreading and drooping leaves," known as fronds.

Oat Bran has received considerable attention in the medical community for its role in helping reduce blood cholesterol.

Nutrition experts believe that Beta glucans, the water-soluble fibers present in oat bran act as an active agent for cholesterol inhibition. Since oat bran is a food, after all, and supplies beneficial fiber to assist in regulating gastro-intestinal function as well, nutritionists also recommend increased daily intake.

For a while, oat bran was touted as a miracle food, a sort of Roto-Rooter for your veins. Predictably, food manufacturers rushed to pump their breads and cereals with oat bran. In truth, oat bran is not proven to be more effective at lowering cholesterol than several other brans or, for that matter, other high-fiber foods. And the results are not as miraculous as claimed. Fiber is, however, definitely beneficial because it keeps the gastrointestinal tract in good working order (it also contains no calories).

The fruit of the walnut tree, which grows in temperate zones throughout the world. The two most popular varieties of walnut are the ENGLISH WALNUT (also called Persian walnut) and the BLACK WALNUT. A close relative is the BUTTERNUT, also referred to as white walnut. ENGLISH WALNUTS are the most widely available and come in many varieties-some with moderately thick shells, others with shells so thin a tiny bird can crack them open.

The nuts of all the species are edible, but the walnuts commonly available in shops are from the common walnut, the only species which has a large nut and thin shell. A horticultural form selected for thin nut shells and hardiness in temperate zones is sometimes known as the 'Carpathian' walnut. The nuts are rich in oil, and are widely eaten both fresh and in cookery. Walnut oil is expensive and consequently is used sparingly; most often in salad dressing. Walnuts are also an excellent source of omega-3 fatty acids, and have been shown as helpful in lowering cholesterol. They need to be kept dry and refrigerated to store well; in warm conditions they become rancid in a few weeks, particularly after shelling. Oil paint often employs walnut oil as an effective binding medium, known for its clear, glossy consistency and non-toxicity.

This native American nut is a member of the hickory family. It has a fat content of over 70 percent...more than any other nut. Pecan trees prefer temperate climates and are widely grown in Georgia, Oklahoma and Texas, and as far north as Virginia. The nut's smooth, tan shell averages about 1 inch in length and, though hard, is relatively thin. The buttery-rich kernel is golden-brown on the outside and beige inside. Chopped or halved shelled pecans are available year-round in cellophane packages, cans and jars. Though unshelled pecans are also available throughout the year, their peak season is during the autumn months.

Flax is an amazingly useful plant. Flax seeds and flax seed oil are a great source of alpha linolenic acid, or LNA.It is a small herb (Linum usitatissimum) grown in the prairies of North America and Russia, with little five-petaled blue (sometimes white or pink) flowers. The plants are harvested when the seed pods have dried and the fibers of the inner stems are processed to make thread for linen. This process dates back to ancient Egypt.

Each cell membrane structure in the brain includes two components, which also help control nutrient transfer in and out of brain cells. These two components are both essential polyunsaturated fatty acids: alpha linolenic acid (LNA, one of the omega-3 fatty acids) and linoleic acid (LA, one of the omega-6 fatty acids). LNA is used by the body to make DHA, or docasahexaenoic acid. Nursing mothers can be assured human milk contains DHA in perfect amounts. Adults and older children need to obtain it from other sources (cold water oily fish like salmon and tuna), or manufacture it from LNA.



Omega-3s are like, well, antifreeze for our bodies. They keep our blood relatively thin and circulating well, especially in cold weather.

The ground flaxseed meal can be added to salads, mixed in with hot or cold cereals, or used in recipes for baked goods. One ounce of ground flaxseed meal (about four tbsp or about 60mls) provides about six grams of protein and eight grams of fiber.

Maple syrup comes from the sap of maple trees. In the early spring, if you cut the bark of (or drill a hole into) certain species of maple trees, clear sap will leak from the cut. This sap is very thin -- almost like water -- but it contains about 2-percent sugar (sucrose). If you boil this watery sap to drive off the water, you eventually get maple syrup. It takes 30 or 40 gallons of sap to make 1 gallon of maple pancake syrup. One tree might yield 10 gallons (38 liters) of sap over the course of four weeks.

Of African origin but now common in tropical and sub-tropical Asia. An oil is extracted from the seed and used for cooking, salad oil and margarines. It is also available as toasted sesame oil for oriental cooking. The whole seeds can also be eaten and are most often seen as a decoration on cakes, confectionery etc. Sesame seed paste, tahini, is used in many dishes e.g. hummus.
