Mizuna (Brassica juncea var. japonica) also known as Xiu Cai, Kyona, Japanese Mustard, Potherb Mustard, Japanese Greens and California Peppergrass.



Mizuna is a Japanese mustard green with dandelion-like jagged edge green leaves with a mild, sweet earthy flavor. It has been culitaved in Japan since ancient times, but most likely originated in China. Mizuna makes an excellent salad green, and is frequently found in Mesclun. It is also used in stir-frys and soups.

Chard (Beta vulgaris var. cicla), also known as Swiss Chard, Silverbeet, Perpetual Spinach or Mangold, is a leaf vegetable, and is one of the cultivated descendants of the Sea Beet, Beta vulgaris subsp. maritima. While used for its leaves, it is in the same species as the garden beet, which is grown primarily for its roots.



Chard has shiny green ribbed leaves, with stems that range from white to yellow and red depending on the cultivar. It has a slightly bitter taste. The leaves are generally treated in the same way as spinach and the stems like asparagus. Fresh young chard can also be used raw in salads.



Cultivars of chard include green forms, such as 'Lucullus' and 'Fordhook Giant', as well as red-ribbed forms such as 'Ruby Chard', 'Rainbow Chard', and 'Rhubarb Chard'.



Modern cladistic botanical taxonomic systems such as that of the Angiosperm Phylogeny Group place chard and the other beets in family Amaranthaceae, but the older systems more likely to be encountered in horticultural sources place them in a family Chenopodiaceae.

Tatsoi (Brassica narinosa or Brassica rapa var. rosularis) (???, ???, ???, or ??? in Chinese; and ???? or ?? in Japanese), also called spinach mustard, spoon mustard, or rosette bok choy, is an Asian variety of Brassica rapa grown for greens. This plant has become popular in North American cuisine as well, and is now grown throughout the world.



The plant has dark green spoon-shaped leaves which form a thick rosette. It has a soft creamy texture and has a subtle yet distinctive flavour.



It takes 45-50 days to harvest and can withstand temperatures down to -9.4 degrees C (15 degrees F). Tatsoi can be harvested even from under the snow.

AKA: Arrugula, Rocket, Rugula, Roquette and Rucola.



Generally used as a salad green. Like most salad greens, Arugula is low in calories. It is a good source of Vitamin K, with smaller amounts of Vitamin A, C, Folic acid and Riboflavin (B2).

Spinach has long had a reputation of being very good for you as it is very high in nutrients. It is a very good source of fiber, calcium, iron and vitamins A, C and K. It also provides potassium.

Spinach is very versatile. It can be used in many ways including raw in salads, cooked in a souffle, omelette, quiche, pancake filling, soup or as a sauce on pasta. As a vegetable accompaniment it is lightly cooked and often enhanced with nutmeg.

Red mustard is a colourful plant measuring eighteen inches in height. The most common varieties that can be found in the United States have oval leaves with scalloped or frilled edges. The leaves of this lovely emerald coloured green have shades of red and burgundy. While the plant itself is crinkly in texture and slightly fuzzy, its flavour is quite bold and thought to be the most robust of the bitter greens. Another important feature is that it has a very spicy taste. It should also be known that mustard greens are rich in vitamin A, vitamin C, calcium, iron, and potassium, but they are low in calories, providing healthy eating without any abundance of calories. It can be served with cooked chicken, smoked fish or ham. It is recommended to be used within two or three days and to be refrigerated in plastic bags. Mustard greens should not be cooked in aluminum or iron pans, in order to prevent darkening. Another important aspect which should be taken into account is that red mustard greens will have a more intense flavour if they are picked in the heat of summer.

Most home gardeners are always on the lookout for new crops to plant - ones that grow well, don't take too much work, and at the end, produce a food that is nutritious and good to eat. For most plants you have to wait until it is fully mature before you harvest the best parts. But that may not be true for beets.

Anthocyanins often have antioxidant properties and are believed to be good for health. Beet roots are good sources of folic acid, potassium and dietary fiber. They also contain sugars that contribute to its colorie content.



Even though the root develops in the soil the best part of the beet from a nutritional point of view may be the beet tops. The tops contain three times as much iron as the roots. The tops are also an excellent source of vitamin A. A comparison of the various nutrients found in beet root and beet tops shows that, on a per weight basis, the tops have a higher nutritional value that the roots.

Pure and natural extracts are governed by laws in many countries that require compliance with procedures that take the extract ingredients directly from the named flavor, such as extracting oils directly from the vanilla bean to make pure or natural vanilla extract. Artificial extracts are flavors that do not necessarily use any ingredients directly from a source named for the extract but instead used combinations of ingredients to arrive at a flavor representative of the named food extract, such as artificial lemon extract. Some of the most widely used extracts include vanilla, almond, anise, maple, peppermint, and numerous solid or jelled extracts such as beef and chicken bouillon or meat demi-glaces. It was known as a medicinal herb to the ancient Greeks and Romans, where soldiers placed burned dill seeds on their wounds to promote healing. Medieval Europe could not grow it fast enough for love potions, casting spells and for protection against witchcraft. “Therewith her Veruayne and her Dill, That hindreth Witches of their will“ (Drayton, Nymphidia, 1627) . Carrying a bag of dried dill over the heart was considered protection against hexes.



Attributed Medicinal Properties

Dill seeds contain carvone as an essential oil. Dill is considered caminative, stomachic and slightly stimulant. Dill water is given to children for digestive problems. Also it “destroyeth the hiccups”.



Culinary Uses

Dill is mainly used in pickling, where most of the plant is used. “Dill Pickles” have become a North American classic and in Europe Sauerkraut and dill vinegars have been popular for centuries. It is especially popular in Russia and Scandinavia, where it is used in courts-bouillons and sauces for fish, pickled salmon, casseroles and soups. It is also used on cakes and breads, particularly in rye breads, the way caraway is used. Dill should be used sparingly as the flavour grows. Its flavour works well in sour cream and yogurt sauces. The chopped fresh leaves are frequently used with trout and salmon, shrimp, deviled eggs, green beans, cauliflower, beets, soups, cottage and cream cheese.

Though there are more than 30 varieties of this herb, the most popular are curly-leaf parsley and the more strongly flavored Italian or flat-leaf parsley.
