Last October, the Food and Drug Administration gave food manufacturers permission to put labels on products high in soy protein indicating that these foods may help lower heart disease risk.



As with health claims for oat bran and other foods before it, this health claim provides consumers with solid scientific information about the benefits of soy protein and helps them make informed choices to create a "heart healthy" diet. Health claims encourage food manufacturers to make more healthful products. With soy, food manufacturers have responded with a cornucopia of soy-based wares.



No sooner had FDA proposed the health claim regulation, however, than concerns arose about certain components in soy products, particularly isoflavones. Resulting questions have engulfed the regulation in controversy.



This came as no surprise to Elizabeth A. Yetley, Ph.D., lead scientist for nutrition at FDA's Center for Food Safety and Applied Nutrition . "Every dietary health claim that has ever been published has had controversy," she says, "even the relationship of saturated fat to a healthy diet."



While the controversy may seem confusing to the consumer giving it casual consideration, a careful review of the science behind the rule reveals a strict divide between what FDA allows as a health claim based on solid scientific research and related issues that go well beyond the approved statements about health benefits of soy protein.

Canola is an oilseed crop which is grown primarily in regions of Western Canada. Each canola plant produces yellow flowers which, in turn, produce pods, similar in shape to pea pods but about 1/5th the size. Produced from the fermentation of corn SUGAR, xanthan gum is used as a thickener, EMULSIFIER and STABILIZER in foods such as dairy products and salad dressings.

Some people are allergic to xanthan gum, with symptoms of intestinal gripes, diarrhea, temporary high blood pressure, and migraine headaches

Also, since xanthan gum is produced by a bacterium that is fed corn to grow, some people allergic to corn will also react to it. Yellow Phrygian Husk is a common source of bacterium in which xanthan gum is created

Salt is one of the most ubiquitous food ingredients around. Those who think of salt only as something used to perk up flavor might wonder what could possibly give this ingredient the level of importance it has gained through the ages. In reality, there is much more to this crystalline cube than first meets the eye.



Besides enhancing taste, salt has several other functions in food products. It acts as an antimicrobial or microbiological control agent. It contributes to certain chemical reactions that create a wide variety of food characteristics.



Sometimes the terms "salt" and "sodium" are used interchangeably, but technically this is not correct. "Salt" is sodium chloride. By weight, it is 40 percent sodium and 60 percent chloride.

Most foods and tap water contain sodium and chloride. Sodium is an essential nutrient, a mineral that the body cannot manufacture itself.

Because of sodium's importance to your body, the excretory and nervous systems guard against under-consumption of salt, which is a threat to your body's nerves and muscles. Other ions such as calcium, magnesium, and potassium are also very important. Concentrations of these ions are held in narrow ranges by the kidney.



The association between eating salt and the risk of blood pressure increasing is difficult to quantify. Some people are sensitive to changes in salt intake whereas others can adjust so that blood pressure does not rise at all.



Americans typically consume 4,000-8,000 mg each day, well above their daily needs. A goal for moderation for all adults, (including pregnancy and lactation) is approximately 2,400 mg of sodium per day.

: (Vitamin C) An antioxidant and one of the most important vitamins in the defence against illness. Vitamin C is a water-soluble vitamin which is necessary for the re-formation of tissue in the body and the production of adrenalin and healthy gums.

Vitamin C protects against the harmful effects of pollution, prevents cancer, protects against infections and strengthens the immune defence. It can also lower the level of cholesterol and the blood pressure. Protects against the development of sclerosis.

Vitamin C prevents blood clotting, it induces wound healing and the production of anti-stress hormone. It gives rise to the production of interferon and is necessary in the metabolization of folic acid, tyrosine, and phenylalanine.

Studies indicate that the combination of vitamin C and vitamin E has a stronger effect than the individual vitamins. Vitamin E searches for harmful oxygen radicals in the cell membranes, whereas vitamin C destroys the chain of free radicals. Both of these vitamins are very active antioxidants.

Since the body cannot produce vitamin C itself, it must be provided through the diet or as a supplement. Vitamin C normally only stays in the body for a few hours. Therefore it should be supplemented at short intervals. Vitamin C is secreted with the urine. Illness increases the body's need of vitamin C.

The best way of taking vitamin C is therefore as a long-acting tablet or at least three times daily with bioflavanoids, which are found in fruit and vegetables or can be taken as a supplement. For many acute diseases it can be taken once an hour with advantage. Vitamin C is most effectively administered intravenously, especially if a larger therapeutic supplement is needed, but this requires consultation with a doctor.

Acesulfame K, sold commercially as Sunette or Sweet One, was approved by the FDA in 1988 as a sugar substitute in packet or tablet form, in chewing gum, dry mixes for beverages, instant coffee and tea, gelatin desserts, puddings and nondairy creamers. The manufacturer has asked the FDA to approve Acesulfame K for soft drinks and baked goods.



The public is waiting for an artificial sweetener that is unquestionably safe. But this one isn't it. Even compared to aspartame and saccharin (which are afflicted with their own safety problems, Acesulfame K is the worst. The additive is inadequately tested; the FDA based its approval on tests of Acesulfame K that fell short of the FDA's own standards. But even those tests indicate that the additive cause’s cancer in animals, which means it may increase cancer risk in humans. In l987, CSPI urged the FDA not to approve Acesulfame K, but was ignored. After the FDA gave the chemical its blessing, CSPI urged that it be banned. The FDA hasn't yet ruled on that request.

Symptoms of overload include: nausea, vomiting, diarrhea, rapid heartbeat, dizziness, shock and even death.



***Parents should be warned that iron supplements and multivitamins containing iron are the second most common cause of poisoning in young children in the U.S. (Aspirin is the first) The lethal dose of ferrous sulfate for a 2-year-old is only 3g.***

Vitamin B3



Also called Niacin, Nicotinic Acid, Niacinimide, Nicotinic.



Acts as a co-enzyme in the release of energy from carbohydrates. Also needed to help breakdown fats and proteins. Aids in formation of red blood cells.

Since the 1950's doctors have used nicotinic acid to treat high cholesterol. Niacin is the only drug available that both substantially lowers the "bad" lipids (LDL), and increases the "good"(HDL) cholesterol. The reason this vitamin is not in the forefront of cholesterol therapy is because many people treated with high doses of niacin experience bothersome side effects such as; facial flushing, nausea, stomach pain, diarrhea and much more serious, liver damage.



Milk, eggs, meats (especially liver), chicken, fish, and most other protein-rich foods contain a significant amout of niacin. Also in smaller amounts in coffee and tea.



Dificiency is very rare in modern countries. Symptoms include: Pellagra (diarrhea, dermatitis, and dementia) Less severe symptoms of deficiency include irritability, loss of appetite, weekness and swollen tongue.

Approved in the United States in April 1998, sucralose (a synthetic chemical) can be used in soft drinks, baked goods, ice cream, sweetener packets, and other products. It previously had been used in Canada, Europe, and elsewhere. Sucralose is safer than saccharin and cyclamate and doesn’t raise the concerns that tests on acesulfame-K and aspartame have raised.

Pantothenic acid, also called vitamin B5 (a B vitamin), is a water-soluble vitamin required to sustain life (essential nutrient). Pantothenic acid is needed to form coenzyme-A (CoA), and is critical in the metabolism and synthesis of carbohydrates, proteins, and fats. In chemical structure, it is the amide between D-pantoate and beta-alanine. Its name is derived from the Greek pantothen (pa?t??e?) meaning "from everywhere" and small quantities of pantothenic acid are found in nearly every food, with high amounts in whole-grain cereals, legumes, eggs, meat, and royal jelly. It is commonly found as its alcohol analog, the provitamin panthenol, and as calcium pantothenate.

Manganese citrate is classified as a micronutrient or a trace mineral. It helps the body convert protein and fat into energy. The mineral also fights against free radicals. The classic role of vitamin D is to help strengthen bone by making calcium and phosphorus more available by increasing absorption. Although calcium usually gets top billing, recent studies have shown vitamin D should share credit for keeping bones strong.



Symptoms of deficiency: Rickets, osteomalacia (softening bones)in adults, people living above 42 degrees latitude are most likely to be deficient do to lack of sunlight during winter months.
