Inositol is necessary for the formation of lecithin and functions closely with a B complex vitamin, Choline. Since it is not essential in the human diet, it cannot be considered a vitamin. Inositol is a fundamental ingredient of cell membranes and is necessary for proper function of nerves, brain, and muscles in the body. Inositol works in conjunction with folacin, Vitamins B-6 and B-12, choline, betaine, and methionine to prevent the accumulation of fats in the liver. It exists as the fiber component phytic acid, which has been investigated for its anti-cancer properties.

Growth Habit: The pineapple plant is a herbaceous perennial, 2-1/2 to 5 ft. high with a spread of 3 to 4 ft. It is essentially a short, stout stem with a rosette of waxy, straplike leaves.

Foliage: The long-pointed leaves are 20 - 72 in. in length, usually needle tipped and generally bearing sharp, upcurved spines on the margins. They may be all green or variously striped with red, yellow or ivory down the middle or near the margins. As the stem continues to grow, it acquires at its apex a compact tuft of stiff, short leaves called the crown or top. Occasionally a plant may bear 2 or more heads instead of the normal one.



Flowers: At blooming time, the stem elongates and enlarges near the apex and puts forth an inflorescence of small purple or red flowers. The flowers are pollinated by humming-birds, and these flowers usually develop small, hard seeds. Seeds are generally not found in commercially grown pineapple.



Fruit: The oval to cylindrical-shaped, compound fruit develops from many small fruits fused together. It is both juicy and fleshy with the stem serving as the fibrous core. The tough, waxy rind may be dark green, yellow, orange-yellow or reddish when the fruit is ripe. The flesh ranges from nearly white to yellow. In size the fruits are up to 12 in. long and weigh 1 to 10 pounds or more.



The presence of pineapples on Caribbean islands was not a natural event, but rather the result of centuries of indian migration and commerce. Accomplished dugout canoe navigators, the maritime tribes explored, raided and traded across a vast expanse of tropical oceans, seas and river systems. Bromelain is found most commonly in the stem of the pineapple plant. However, just eating pineapple will not give you a great deal of extra bromelain, because it is mostly concentrated in the stem, which is not nearly as tasty (albeit still edible).

Bromelain is not a single substance, but rather a collection of enzymes and other compounds. Morinda citrifolia, commonly known as great morinda, Indian mulberry, Mengkudu (Malaysia), beach mulberry, Tahitian noni, cheese fruit[1] or noni (from Hawaiian) is a tree in the coffee family, Rubiaceae. Morinda citrifolia is native to Southeast Asia but has been extensively spread throughout the Indian subcontinent, Pacific islands, French Polynesia, Puerto Rico and recently the Dominican Republic. Noni was explored unsuccessfully by medical researchers for possible use in treating cancer.[9]

The mangosteen (Garcinia mangostana) is a tropical evergreen tree, believed to have originated in the Sunda Islands and the Moluccas. The tree grows from 7 to 25 meters tall. The rind (pericarp) of the edible fruit is deep reddish purple when ripe. The fragrant flesh is sweet and creamy, citrusy with a touch of peach flavor. In Asia, the mangosteen fruit is known as the "Queen of Fruits." It is closely related to other edible tropical fruits such as button mangosteen and lemondrop mangosteen. It has a flavor similar to but different from its cousin the button mangosteen with an interesting taste but unlike its cousin its skin is a hard rind instead of being tissue-thin.

Depending on the fruit size and ripeness, there might be seeds in the aril segments. The seeds, however, are not palatable unless roasted. The number of aril pods is directly related to the number of petals on the bottom of the pericarp. On average, a mangosteen has 5 aril segments (round up figure). The plant does not start producing fruit until around 15 years old, which is somewhat an impediment to cultivation.

Researchers at the USDA Human Nutrition Center (HNRCA) have found that blueberries rank #1 in antioxidant activity when compared to 40 other fresh fruits and vegetables. Antioxidants help neutralize harmful by-products of metabolism called "free radicals" that can lead to cancer and other age related diseases. Anthocyanin -- the pigment that makes the blueberries blue -- is thought to be responsible for this major health benefit.

In another USDA Human Nutrition Center (HNRCA) lab, neuroscientists discovered that feeding blueberries to laboratory rats slowed age-related loss in their mental capacity, a finding that has important implications for humans. Again, the high antioxidant activity of blueberries probably played a role.

Its small flowers have waxy white petals and sweet smelling aroma. It has bushy feathery foliage. The evergreen, opposite leaves are lanceolate to elliptic. Individual leaves are 3 - 20 cm in length and 1 - 2 cm wide.

Schisandra (Magnolia Vine) is a genus of shrub commonly grown in gardens. It is a hardy deciduous climber which thrives in virtually any soil; its preferred position is on a sheltered shady wall. It may be propagated by taking cuttings of half-matured shoots in August. Species include S. chinensis, S. glaucescens, S. rubriflora and S. rubrifolia.

Commercially, it is used in the preparation of mango chutneys and as a base for imitation maple syrup.



Fenugreek is the small stony seeds from the pod of a bean-like plant. The seeds are hard, yellowish brown and angular. Some are oblong, some rhombic, other virtually cubic, with a side of about 3mm (1/8”). A deep furrow all but splits them in two. They are available whole and dried , or as a dull yellow powder, ground from the roasted seeds.

Bouquet: Warm and penetrating, becoming more pronounced when the seeds are roasted. Ground, they give off a ‘spicy’ smell, pungent, like an inferior curry powder which would probably contain too much fenugreek.

Flavour: Powerful, aromatic and bittersweet, like burnt sugar. There is a bitter aftertaste, similar to celery or lovage.

Grown in temperate zones throughout the world and cultivated for at least 3,000 years, apple varieties now number well into the thousands. Since oranges are susceptible to frost damage, growers commonly use sprinklers to coat them with ice when temperatures go below freezing. This practice protects the crops by regulating temperature.

Peaches are the third most popular fruit in the nation, behind apples and oranges, respectively. Now is the time to eat peaches. Farmers' markets, roadside stands and grocery stores are loaded with blushing, sweet, fragrant, juicy peaches.



Of course, peaches are best eaten fresh, but, with so many around they can be frozen, canned and used in a variety of ways. Now is the time to add a sliced peach to a bowl of read-to-eat cereal to enhance the flavor and nutritional value.

Whether fresh, canned or frozen, peaches are nutritious: fat free, cholesterol free, sodium free, and high in vitamins A and C.

Locally grown peaches purchased at this time of year are sweeter and juicier than winter peaches imported from Chile, Mexico and New Zealand available November through April. Winter peaches are often mealy and dry.



Peaches do not get any sweeter once they are picked. They do get softer and juicier, but never sweeter. That is why it is important to avoid rock hard peaches that were picked when they were still green.

There are hundreds of plum varieties cultivated throughout the world. All grow in clusters, have smooth, deeply colored skin and a center pit. Plums can range in shape from oval to round and in size from 1 to 3 inches in diameter. Their color can be yellow, green, red, purple, indigo blue and almost anything in between. The pale silvery-gray, filmy-looking coating on a plum's skin is natural and doesn't affect quality. Fresh plums are available from May to late October. Choose firm plums that give slightly to palm pressure. Avoid those with skin blemishes such as cracks, soft spots or brown discolorations, the latter indicating sunburn. Very firm plums may be stored at room temperature until slightly soft.

A standard dessert throughout Latin America and the Spanish-speaking islands of the West Indies is stewed guava shells (cascos de guayaba), that is, guava halves with the central seed pulp removed, strained and added to the shells while cooking to enrich the sirup. The canned product is widely sold and the shells can also be quick-frozen. They are often served with cream cheese. Sometimes guavas are canned whole or cut in half without seed removal.



Bars of thick, rich guava paste and guava cheese are staple sweets, and guava jelly is almost universally marketed. Guava juice, made by boiling sliced, unseeded guavas and straining, is much used in Hawaii in punch and ice cream sodas. A clear guava juice with all the ascorbic acid and other properties undamaged by excessive heat, is made in South Africa by trimming and mincing guavas, mixing with a natural fungal enzyme (now available under various trade names), letting stand for 18 hours at 120º to 130º F (49º-54º C) and filtering. It is made into sirup for use on waffles, ice cream, puddings and in milkshakes. Guava juice and nectar are among the numerous popular canned or bottled fruit beverages of the Caribbean area. After washing and trimming of the floral remnants, whole guavas in sirup or merely sprinkled with sugar can be put into plastic bags and quick-frozen.



Green mature guavas can be utilized as a source of pectin, yielding somewhat more and higher quality pectin than ripe fruits

Growth Habit: The pineapple plant is a herbaceous perennial, 2-1/2 to 5 ft. high with a spread of 3 to 4 ft. It is essentially a short, stout stem with a rosette of waxy, straplike leaves.

Foliage: The long-pointed leaves are 20 - 72 in. in length, usually needle tipped and generally bearing sharp, upcurved spines on the margins. They may be all green or variously striped with red, yellow or ivory down the middle or near the margins. As the stem continues to grow, it acquires at its apex a compact tuft of stiff, short leaves called the crown or top. Occasionally a plant may bear 2 or more heads instead of the normal one.



Flowers: At blooming time, the stem elongates and enlarges near the apex and puts forth an inflorescence of small purple or red flowers. The flowers are pollinated by humming-birds, and these flowers usually develop small, hard seeds. Seeds are generally not found in commercially grown pineapple.



Fruit: The oval to cylindrical-shaped, compound fruit develops from many small fruits fused together. It is both juicy and fleshy with the stem serving as the fibrous core. The tough, waxy rind may be dark green, yellow, orange-yellow or reddish when the fruit is ripe. The flesh ranges from nearly white to yellow. In size the fruits are up to 12 in. long and weigh 1 to 10 pounds or more.



The presence of pineapples on Caribbean islands was not a natural event, but rather the result of centuries of indian migration and commerce. Accomplished dugout canoe navigators, the maritime tribes explored, raided and traded across a vast expanse of tropical oceans, seas and river systems. The herbaceous plant they called "anana," or "excellent fruit," originally evolved in the inland areas of what is now Brazil and Paraguay and was widely transplanted and cultivated. In China, Japan, and Southeast Asia, for instance, the annual per capita consumption of rice is 200 to 400 pounds; in the United States, the per capita consumption is about 17 pounds. Texmati: Certain types of rice--some sold only under a trade name--have been developed in the United States to approximate the flavor and texture of basmati rice. Texmati is one of these; it was developed to withstand the hot Texas climate (there is also a brown rice version).



Wehani: An American-grown aromatic rice, Wehani has an unusual rust-colored bran that makes it turn mahogany when cooked.



Wild pecan (popcorn rice): Another basmati hybrid, this aromatic rice is tan in color (because not all of the bran has been removed, with a pecanlike flavor and firm texture.

Traditional soy products such as tofu, tempeh, and soy milk are very high in protein. Tempeh has the highest percentage of protein of the traditional soy products providing approximately 22 grams of protein for each 4 ounce (113 gram) serving. Tofu provides approximately 9 grams of protein for a similar small serving size. The Recommended Dietary Allowance of protein for adult males (aged 25-50) is appoximately 63 grams and 50 grams for adult females (aged 25-50). Soy products can provide a significant portion of one's daily protein needs.



It is important to keep in mind, however, that the balance of amino acids (protein building blocks) in soy is not the same as meat. The tocopherol and tocotrienol subfamilies are each composed of alpha, beta, gamma, and delta vitamers having unique biological effects. Different ratios of these compounds are found in anatomically different parts of a plant. For example, the green parts of a plant contain mostly alpha-tocopherol and the seed germ and bran contain mostly tocotrienols. Along with other nutrients tocopherols and tocotrienols are concentrated in the bran layers of the rye grain, and are only present at low levels in the flour endosperm. Moreover, while the acetate form is rapidly activated within the body, activation of the succinate form is slower. The succinate form appears to access and benefit areas of the tissues that are unavailable to the other forms. For this reason, there is a tendency to regard alpha-tocopherol succinate as a distinctly different and beneficial compound. Alpha-tocopherol succinate appears to have longer half-life in the body, and does not interfere with vitamin A or K absorption.95-98

Oat Bran has received considerable attention in the medical community for its role in helping reduce blood cholesterol.

Nutrition experts believe that Beta glucans, the water-soluble fibers present in oat bran act as an active agent for cholesterol inhibition. Since oat bran is a food, after all, and supplies beneficial fiber to assist in regulating gastro-intestinal function as well, nutritionists also recommend increased daily intake.

For a while, oat bran was touted as a miracle food, a sort of Roto-Rooter for your veins. Predictably, food manufacturers rushed to pump their breads and cereals with oat bran. In truth, oat bran is not proven to be more effective at lowering cholesterol than several other brans or, for that matter, other high-fiber foods. And the results are not as miraculous as claimed. Fiber is, however, definitely beneficial because it keeps the gastrointestinal tract in good working order (it also contains no calories).

Varieties



There are two basic categories of cherry: sweet and sour. Sweet cherries are further differentiated by color: dark- and light-skinned cherries. Of the dark-skinned cherries, Bing is far and away the commonest, but other red- or dark-skinned varieties include the Van, Chapman, Larian, and Black Republican.



Bing: There are many commercial varieties of sweet cherries, but the leader is the Bing, a large, round, extra-sweet cherry with purple-red flesh and a deep red skin that verges on black when fully ripe.



Lambert: The second most popular variety is the Lambert, a smaller, heart-shaped red cherry similar in taste and texture to the Bing.

Availability

Folic acid is the synthetic form of the B vitamin folate. Folic acid is necessary for the synthesis of nucleic acids and the formation of red blood cells. Potassium iodide, also known as KI, is a form of iodine. Selenium is a component of an enzyme with antioxidant properties. Like vitamin E, it prevents oxidation of polyunsaturated fatty acids. May free vitamin E for other tasks.

Found in Meats, Seafoods, Kidney, and Liver. Cereals and grains can also be good sources, but the level varies depending on the amount of selenium in the soil they were grown in.
