The coconut, one of the most important cultivated trees in the world, is Cocos nucifera of the palm family, Palmaceae. Only the one species is in this genus. (Hortus II Dictionary, Bailey)



"Descriptive features are: (1) the slender often leaning trunk, enlarged at base, ringed above and 8 to 12 inches in diameter; (2) many pinnate (feathery) leaves 12 to 20 feet long with basal sheath of coarse brown fibers, long petiole (stem) and numerous very narrow shiny yellow-green segments (pinnae or leaflets) spreading regularly in one plane on both sides of axis; (3) numerous whitish or pale yellow male and female flowers in branched flower clusters at leaf bases; and (4) fruit, the familiar coconut, egg-shaped or elliptic, consisting of a light brown fibrous husk 8 to 12 inches long, a hard shell and one very large hollow seed with whitish, oily edible flesh." In the young fruit this is a liquid but it gradually becomes firm, and by nine months the meat is at its greatest thickness." (Consider the Coconut, Harry P. The bluntly 3-angled husk is 3/4 to 1-1/2 inches thick. It does not split open spontaneously as some fruits do. The meat is about 3/8 inch thick. The large central cavity contains a watery or milky liquid often called coconut milk or coconut water. It is one of the largest seeds known, surpassed only by the 1-seeded, 2-lobed fruit of the double-coconut (Lodoicea maldivica), a tall fan palm of the Seychelles islands in the Indian Ocean. The coconut palm is medium sized, usually 30 to 60 feet, sometimes as tall as 80 feet. "The slender trunk is enlarged to 16 to 20 inches in diameter at base, often slightly inclined there, and may be leaning as a result of the constant coastal breeze or after partial uprooting by a hurricane. The gray or brown trunk is lightly cracked. At the apex is the relatively broad evergreen growth of alternate, erect, spreading and drooping leaves," known as fronds. A word about "Partially Hydrogenated" Oils:



It is now known that the process of hydrogenation creates "trans fatty acids" (TFAs), which are toxic entities that enter cell membranes, block utilization of essential fatty acids (EFAs) and impede cell functionality. TFAs also cause a rise in blood cholesterol. These substances are not present in natural oils.



Trans fat, which is also called hydrogenated or partially hydrogenated vegetable oil. Trans fat is found in margarine and shortening and foods -- such as cookies, crackers and other commercially baked goods -- made with these ingredients. Trans fat raises LDL cholesterol and lowers high-density lipoprotein (HDL), the "good" cholesterol.



Hydrolyzed: A protein obtained from various foods (like soybeans, corn or wheat), then broken down into amino acids by a chemical process called acid hydrolysis. Hydrolyzed plant or vegetable protein is used as a flavor enhancer in numerous processed foods like soups, chilis, sauces, stews and some meat products like frankfurters. Hydrolyzation of protein inevitably creates some (processed) free glutamic acid (MSG).



Manufacturers are acutely aware that many consumers would prefer not to have MSG in their food. Some manufacturers have responded by using "clean labels," i.e., labels that contain only ingredient names they think consumers will not recognize as containing MSG -- names such as "hydrolyzed soy protein." Others advertise "No MSG," "No MSG Added," or "No Added MSG," even though their products contain MSG

Glucose syrup is the most viable substitute for sugar. It is an aqueous solution of several compounds: principally glucose, dextrose and maltose. A purified, concentrated solution of nutritive monosaccharides and higher saccharides, it is obtained by hydrolysing starch with specific enzymes under controlled conditions. Important functional properties of glucose syrup include high fermentability, viscosity, hygroscopicity, sweetness, colligative properties and facilitates browning reaction; it adds body and mouthfeel in the preparation of various products.

The exact components of milk vary by species, but it contains significant amounts of saturated fat, protein and calcium. These amounts are not large in comparison to other foods rich in them, including coconuts, fish, and kale respectively, because milk is predominantly composed of water. Aquatic mammals, such as seals and whales, produce milk that is very rich in fats and other solid nutrients when compared with land mammals' milk.



Most milk packs a nutritional punch and contains protein, calcium, phosphorus, vitamins A and D, LACTOSE (milk sugar) and riboflavin. On the minus side, milk's natural sodium content is quite high. Most milk sold in the United States today is PASTEURIZED, which means the microorganisms that cause diseases (such as salmonella and hepatitis) and spoilage have been destroyed by heating, then quick-cooling, the milk. Pasteurization eliminates the possibility of disease and gives milk a longer shelf life. Most commercial milk products have also been HOMOGENIZED, meaning that the milk fat globules have been broken down mechanically until they are evenly and imperceptibly distributed throughout the milk. The end result is that the CREAM does not separate from the milk and the liquid is uniformly smooth.



Cow's milk is generally available in several varieties. In some countries these are:



Full cream (or "whole" in US, "homo milk" in Canada & some US dairies, about 3.25% fat)

Semi-skimmed ("reduced fat" or "low fat", about 1.5-1.8% fat)

Skimmed (about 0.1% fat)

In the United States, skim milk is also known as "fat free" milk, due to USDA regulations stating that any food with less than ½ gram of fat per serving can be labeled "fat free".

Sodium Caseinate

Sodium Caseinate is a modified protein extracted from milk. It has no odor or taste and is used as a thickening and whitening agent in dairy products. The protein component utilizes emulsification, water absorption, gelling, and stabilization properties. It is used in dairy non-creamers to act as a creamy, white dairy substitute without the lactose that people who are lactose-intolerant cannot digest. Because of its large difference between the “milk derivative” that is sodium caseinate and real cream or milk, it is considered non-dairy. There is controversy whether sodium caseinate still has all the nutritional benefits that milk has because it is non-dairy. It is also a source of free glutamic acid. See monosodium glutamate (MSG).

is stabilized by exchange with the mineral depot in the skeleton

through the action of parathyroid hormone. This hormone inhibits

tubular reabsorption of phosphates by the kidney and brings about

demineralization of bone tissue through the action of osteoclasts. The

amount of parathyroid hormone that enters the circulation is probably

regulated by the calcium level of the blood. Intestinal absorption

depends on requirements and is therefore limited. Excretion takes

place mainly in the faeces as calcium phosphate so that the continuous

use of excessive amounts of sodium phosphate and phosphoric acid may

cause a loss of calcium. As a result of physiological regulating

mechanisms, man and animals can tolerate large variations in phosphate

intake without the balance being upset.



Some investigators have considered that the formation in the

intestinal tract of insoluble salts of phosphate with calcium iron

and other metal ions might result in decreased absorption of such

Dipotassium phosphate - also phosphoric acid, dipotassium salt; dipotassium hydrogen orthophosphate; potassium phosphate, dibasic - is a highly water-soluble salt which is often used as a fertilizer, food additive and buffering agent. It is a common source of phosphorus and potassium.

These additives strengthen bread dough so it can be used in bread-making machinery and help produce a more uniform grain and greater volume. They act as whipping agents in dried, liquid, or frozen egg whites and artificial whipped cream. SODIUM STEAROYL FUMARATE serves the same function

Cream (including light whipping cream) is a dairy product that is composed of the higher-butterfat layer skimmed from the top of milk before homogenization. In un-homogenized milk, over time, the lighter fat rises to the top. In the industrial production of cream this process is accelerated by using centrifuges called "separators". In many countries, cream is sold in several grades depending on the total butterfat content. Cream can be dried to a powder for shipment to distant markets.



Cream produced by cows (particularly Jersey cattle) grazing on natural pasture often contains some natural carotenoid pigments derived from the plants they eat; this gives the cream a slight yellow tone, hence the name of the yellowish-white colour, cream. Cream from cows fed indoors, on grain or grain-based pellets, is white.

We get our energy from the nutrients in food. The main sources of energy are carbohydrates (starches and sugars), fats and proteins. The association between eating salt and the risk of blood pressure increasing is difficult to quantify. Some people are sensitive to changes in salt intake whereas others can adjust so that blood pressure does not rise at all.



Americans typically consume 4,000-8,000 mg each day, well above their daily needs. A goal for moderation for all adults, (including pregnancy and lactation) is approximately 2,400 mg of sodium per day.

Flavor(s) Natural & Artificial

A combination of both what is considered “natural” and “artificial” flavoring under the Federal Drug Administration(FDA) Regulations. Artificial flavoring “means any substance, the function of which is to impart flavor, which is not derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, fish, poultry, eggs, dairy products, or fermentation products thereof.” In other words, substances not found in nature to add flavor to a substance is considered artificial. Natural flavoring “means the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating or enzymolysis, which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional.” See Natural Flavor.

Approved in the United States in April 1998, sucralose (a synthetic chemical) can be used in soft drinks, baked goods, ice cream, sweetener packets, and other products. It previously had been used in Canada, Europe, and elsewhere. Sucralose is safer than saccharin and cyclamate and doesn’t raise the concerns that tests on acesulfame-K and aspartame have raised.
