The chickpea (Cicer arietinum) (also garbanzo bean, Indian pea, ceci bean, bengal gram, Kabuli chana, kadale kaalu, sanaga pappu, shimbra, Kadala) is an edible legume of the family Fabaceae, subfamily Faboideae. Chickpeas are high in protein and one of the earliest cultivated vegetables. 7,500-year-old remains have been found in the Middle East.[

Of African origin but now common in tropical and sub-tropical Asia. An oil is extracted from the seed and used for cooking, salad oil and margarines. It is also available as toasted sesame oil for oriental cooking. The whole seeds can also be eaten and are most often seen as a decoration on cakes, confectionery etc. Sesame seed paste, tahini, is used in many dishes e.g. hummus. Tahini (or "tehina"/"thina" in Arabic and Hebrew, "tahin" in Turkish, French, Dutch and Danish) is a paste made from ground sesame seeds. It is a major ingredient in hummus and other dishes from the Middle East. It can be purchased fresh, in cans, in jars, or dehydrated. Tahini comes in two varieties — 'hulled' and 'unhulled'. Both types are relatively high in vitamins and proteins. Unhulled tahini is quite bitter but has a much higher proportion of vitamins, calcium, and protein because the sesame seeds are ground whole.
