Wheat flour is an excellent source of complex carbohydrates. Other than gluten flour, all types of wheat flour derive at least 80 percent of their calories from carbohydrates. Depending on the flour type, the percent of calories from protein ranges from 9 to 15 percent, except from gluten, which has a 45 percent protein content. Calories from fat are never more than 5 percent.



In addition, wheat flour provides from 3 g (cake flour) to 15 g (whole-wheat flour) of dietary fiber per 1-cup serving. Wheat flour contains B vitamins, calcium, folacin, iron, magnesium, phosphorus, potassium zinc and other trace elements, and minimal amounts of sodium.



Wheat is the most important cereal crop in the world and ubiquitous in our culture. Bread, pasta, bagels, crackers, cakes, muffins and other wheat containing products line our supermarket shelves and fill our grocery baskets. It is luck for us that this popular grain is available throughout the year.



Classes used in the United States are



Durum - Very hard, translucent, light colored grain used to make semolina flour for pasta.

Hard Red Spring - Hard, brownish, high protein wheat used for bread and hard baked goods.

Hard Red Winter - Hard, brownish, very high protein wheat used for bread, hard baked goods and as an adjunct in other flours to increase protein.

Soft Red Winter - Soft, brownish, medium protein wheat used for bread.

Hard White - Hard, light colored, opaque, chalky, medium protein wheat planted in dry, temperate areas. Used for bread and brewing

Soft White - Soft, light colored, very low protein wheat grown in temperate moist areas. Used for bread.

Hard wheats are harder to process and red wheats may need bleaching. Therefore, soft and white wheats usually command higher prices than hard and red wheats on the commodities market.



Wheat, in its natural unrefined state, features a host of important nutrients.



Therefore, to receive benefit from the wholesomeness of wheat it is important to choose wheat products made from whole wheat flour rather than those that are refined and stripped of their natural goodness.



The health benefits of wheat depend entirely on the form in which you eat it. These benefits will be few if you select wheat that has been processed into 60% extraction, bleached white flour. 60% extraction - the standard for most wheat products in the United States, including breads, noodles and pastas, baked goods like rolls or biscuits, and cookies - means that 40% of the original wheat grain was removed, and only 60% is left. Unfortunately, the 40% that gets removed includes the bran and the germ of the wheat grain - its most nutrient-rich parts. In the process of making 60% extraction flour, over half of the vitamin B1, B2, B3, E, folic acid, calcium, phosphorus, zinc, copper, iron, and fiber are lost.



Since 1941, laws in the United States have required "enrichment" of processed wheat flour with vitamins B1, B2, B3 and iron in response to the problems created by 60% extraction. Although not nearly as much of these B vitamins and iron are replaced as are removed from 60% extraction flour, "enriched" seems an odd word to describe this process. If you select 100% whole wheat products, however, the bran and the germ of the wheat will remain in your meals, and the health benefits will be impressive! Our food ranking qualified whole wheat (in its original non-enriched form) as a very good source of dietary fiber and manganese, and as a good source of magnesium.



Bran is made up of the outer layers of the wheat kernel. Bran is used in whole wheat flour. It is also used in breakfast cereals.



The germ is tiny - about 2 1/2% of the whole wheat kernel. The germ is the part that will sprout and grow into a new wheat plant if the kernel is planted. Wheat germ is sold in grocery stores and food markets. Whole wheat flour also contains wheat germ.

Malted barley is barley that has been allowed to germinate (sprout) to a degree and is then dried. This is accomplished industrially by increasing the water content of the seed to 40-45% by soaking it for a period close to 40 hours. The seed is then drained and held at a constant temperature (60 F) for close to 5 days until it starts to sprout. The barley is slowly dried in a kiln at temperatures gradually rising to 122 F for lighter malts and 220 F for darker malts. This kiln drying takes about 30 hours. Finally, the rootlets from the partially germinated seeds are removed.

Vitamin B3



Also called Nicotinic Acid, Niacinamide, Nicotinic.



Acts as a co-enzyme in the release of energy from carbohydrates. Also needed to help breakdown fats and proteins. Aids in formation of red blood cells.

Since the 1950's doctors have used nicotinic acid to treat high cholesterol. Niacin is the only drug available that both substantially lowers the "bad" lipids (LDL), and increases the "good"(HDL) cholesterol. The reason this vitamin is not in the forefront of cholesterol therapy is because many people treated with high doses of niacin experience bothersome side effects such as; facial flushing, nausea, stomach pain, diarrhea and much more serious, liver damage.



Milk, eggs, meats (especially liver), chicken, fish, and most other protein-rich foods contain a significant amout of niacin. Also in smaller amounts in coffee and tea.



Dificiency is very rare in modern countries. Symptoms include: Pellagra (diarrhea, dermatitis, and dementia) Less severe symptoms of deficiency include irritability, loss of appetite, weekness and swollen tongue.

Mineral that helps with creation of hemoglobin, and helps hold oxygen in the blood. Iron, along with B12 and Folate, creates new blood cells. Ferrous Sulfate is a common term used in the food industry for Reduced Iron.

Iron can be found in natural sources such as; Beef, Baked Potatoes, Clams, Soybeans, Eggs, Fish, and many green leafy vegetables.



Deficiency symptoms include; Anemia, dry coarse hair, dysphagia, dizziness and hair loss.



Generally considered non-toxic if under 75mg daily. Higher doses can cause abdominal cramps, vomiting & diarrhea. Severe overdoses of iron can be fatal.

Vitamin B-1, Perfectly safe, despite adding minuscule amounts of nitrate to our food.

Folic acid is the synthetic form of the B vitamin folate. Folic acid is necessary for the synthesis of nucleic acids and the formation of red blood cells. Folic-acid deficiency most commonly causes folic-acid-deficiency anemia. Symptoms include gastrointestinal problems, such as sore tongue, cracks at the corners of the mouth, diarrhea, and ulceration of the stomach and intestines. Large doses of folic acid can cause convulsions and other nervous-system problems.

The Food and Drug Administration (FDA) regulations require enriched grain products to contain this essential vitamin.



Current studies have discovered a link between folic acid and brain function in older people. The study divided 818 people ages 50 to 75 to take either a vitamin containing 800 micrograms of folic acid a day, or a dummy pill, for three years.



On memory tests, the supplement users had scores comparable to people 5.5 years younger, Durga said. On tests of cognitive speed, the folic acid helped users perform as well as people 1.9 years younger.

Six Basic Classes



The many varieties of winter and spring wheat are grouped into six official classes. The class a variety fits into is determined by its hardness, the color of its kernels and by its planting time. Hard Red Winter (HRW) is an important bread wheat which accounts for almost forty percent of the U.S. wheat crop and wheat exports. This fall-seeded wheat is produced in the Great Plains, which extend from the Mississippi River west to the Rocky Mountains and from the Dakotas and Montana south to Texas. Significant quantities are also produced in California. HRW has a moderately high protein content, usually averaging 11-12%, and good milling and baking characteristics. There are no subclasses of this class.



Hard Red Spring (HRS), another important bread wheat, maintains the highest protein content, usually 13-14%, in addition to good milling and baking characteristics. This spring-seeded wheat is primarily grown in the north central United States--North Dakota, South Dakota, Minnesota and Montana. HRS comprises just over twenty percent of U.S. wheat exports. Subclasses based upon the dark, hard and vitreous kernel content (DHV), include

dark northern spring, northern spring and red spring.



Hard White (HW) is the newest class of wheat to be grown in the United States. It is used for noodles, yeast breads and flat breads and is grown in California, Idaho, Kansas and Montana. There are no subclasses. Currently, HW is used primarily in domestic markets with limited quantities being exported. It is anticipated that exports of this class will increase.



Soft White (SW) is a preferred wheat for flat breads, cakes, pastries, crackers and noodles and is grown primarily in the Pacific Northwest. Soft white is a low protein wheat, usually about 10%. SW represents just over twenty percent of total U.S. exports, primarily to Asia and the Middle East. Subclasses are soft white, white club and western white.



Soft Red Winter (SRW) is grown in the eastern third of the United States. SRW is a high yielding wheat, but relatively low in protein, usually about 10%. SRW is used for cakes, pastries, flat breads, crackers and snack foods. This fall-seeded wheat comprises about fourteen percent of U.S. wheat exports. There are no subclasses of this class.



Durum, the hardest of all U.S. wheats, provides semolina for spaghetti, macaroni and other pasta products. This spring-seeded wheat is grown primarily in the same northern areas as hard red spring, while smaller winter-sown quantities are grown in Arizona and California. Durum comprises nearly five percent of total U.S. wheat exports. Subclasses are hard amber durum, amber durum and durum.

The fact that you can live without food for a long period of time, even months, but live only for a few days without water is true. Barley is a very important grain in the world today. It is very versatile in every way. It has been well adapted through its evolution. It has a very mysterious and much debated beginning. Now however, barely has become well known and so have its many uses. Barley, which is of the genus Hordeum, is a cereal that belongs to the grass family Poaceae. Barley has many different varieties. The most common is Hordeum vulgare, which is a six-rowed type of barley that has a spike notched on opposite sides with three spikelets on each notch. At each notch there is a flower or floret that later develops into a kernel. Hordeum distichum is a two-rowed type of barley that has central florets producing kernels and it has lateral florets that are sterile. Lastly there is Hordeum irregulare which has fertile central florets and different arrangements of sterile and fertile lateral florets.

Triticale is the stabilized hybrid of wheat (Triticum) and rye (Secale). Poland, Germany, China, and France account for nearly 90 percent of world triticale production. Globally, triticale is used primarily for livestock feed. In Mexico, which grows the crop, triticale is used mostly for whole-grain tricale breads and tortillas. In the US, triticale is harvested mostly for forage, but there is a small market for pancake mixes and crackers due to a savory, nutty flavor. Ethanol plants will pay a premium for triticale over barley since it has more starch and no hull, making alcohol production more efficient. Although wheat-rye hybrids date back to 1875, it was only in 1953 that the first North American triticale breeding program was initiated, at the University of Manitoba.

Rye probably first grew wild in southwest Asia, but it was first cultivated in north and northwestern Europe, where it remains a staple food and the most common flour used for baking breads. To this day, nearly 95 percent of the world's rye is grown in the area between the Ural Mountains and the Nordic Sea. The top rye growers are Russia, Belarus, Poland and Germany.



Rye was a food staple throughout all of Europe until the 19th century, when it was outpaced by wheat. Though rare now, epidemics of St. Anthony's Fire—a condition caused by eating the ergot fungus that grows on rye—were common throughout the Middle Ages.



Nutrition



One slice (one serving) of whole grain rye bread has more than two and a half grams of protein, nearly two grams of dietary fiber, and only one gram of fat. Soluble fiber, which may help reduce the risk of heart disease by helping lower blood LDL cholesterol levels, makes up about 17 percent of the dietary fiber found in whole grain rye foods.



The insoluble fiber found in whole grain rye has a high concentration of lignans—more than any other cereal crop. Lignans not only make up part of the insoluble fiber content found in seeds and grains, they are also a phytonutrient (called phytoestrogens), similar to those in flaxseed and soy. Studies support the theory that lignans may help inhibit the development and growth of hormone-dependent cancers, such as prostate and breast cancer and reduce the risk of coronary disease.

Amaranth is a tall plant with very broad leaves; it produces many thousands of tiny seeds. The leaves and the seeds are edible. The amaranth is closely related to pigweed, spinach, beets, and other plants in the goosefoot family, Chenopodiaceae. Although the amaranth is sometimes classified in the goosefoot family, it is most commonly classified in its own family, Amaranthaceae. The Amaranth flour has a pleasant, nutty taste. It makes good tasting bread, muffins, bagels, pasta, milk, imitation nut butter ,cookies, gravies, sauces, pancakes, flatbreads, doughnuts, dumplings, and who knows what else.The fiber content of amaranth is three times that of wheat and its iron content, five times more than wheat. It contains two times more calcium than milk. Using amaranth in combination with wheat, corn or brown rice results in a complete protein as high in food value as fish, red meat or poultry.



Amaranth also contains tocotrienols (a form of vitamin E) which have cholesterol-lowering activity in humans. Cooked amaranth is 90% digestible and because of this ease of digestion, it has traditionally been given to those recovering from an illness or ending a fasting period. Amaranth consists of 6-10% oil, which is found mostly within the germ. The oil is predominantly unsaturated and is high in linoleic acid, which is important in human nutrition.



The amaranth seeds have a unique quality in that the nutrients are concentrated in a natural "nutrient ring" that surrounds the center, which is the starch section. For this reason the nutrients are protected during processing. The amaranth leaf is nutritious as well containing higher calcium, iron, and phosphorus levels than spinach.

Flax is an amazingly useful plant. Flax seeds and flax seed oil are a great source of alpha linolenic acid, or LNA.It is a small herb (Linum usitatissimum) grown in the prairies of North America and Russia, with little five-petaled blue (sometimes white or pink) flowers. The plants are harvested when the seed pods have dried and the fibers of the inner stems are processed to make thread for linen. This process dates back to ancient Egypt.

Each cell membrane structure in the brain includes two components, which also help control nutrient transfer in and out of brain cells. These two components are both essential polyunsaturated fatty acids: alpha linolenic acid (LNA, one of the omega-3 fatty acids) and linoleic acid (LA, one of the omega-6 fatty acids). LNA is used by the body to make DHA, or docasahexaenoic acid. Nursing mothers can be assured human milk contains DHA in perfect amounts. Adults and older children need to obtain it from other sources (cold water oily fish like salmon and tuna), or manufacture it from LNA.



Omega-3s are like, well, antifreeze for our bodies. They keep our blood relatively thin and circulating well, especially in cold weather.

The ground flaxseed meal can be added to salads, mixed in with hot or cold cereals, or used in recipes for baked goods. One ounce of ground flaxseed meal (about four tbsp or about 60mls) provides about six grams of protein and eight grams of fiber.

Regular corn meal is a whole ground corn meal that is full fat and can become rancid because of the high oil content. It can be stored in a refrigerator or freezer up to 6 months and slightly less at ambient temperature.



Bolted corn meal has had a portion of the bran and germ removed in the milling process. Because a portion of the germ remains, the remaining fat content can cause this product to become rancid. It can be stored in a refrigerator or freezer up to 8 months and slightly less at ambient temperatures.



Degermed corn meal has had most of the germ and bran removed during the milling process. Degermed corn meal is lower in fat. It can be stored at a room temperature of less than 21°C (70°F) for 12 months. Storage time would be less when temperatures are more than 21°C (70°F).



Unenriched corn meal contains no added vitamins or minerals.



Enriched corn meal contains added vitamins and minerals. It is enriched with thiamin, riboflavin, niacin, folic acid, and iron in harmless and assimilable form. It may contain calcium and vitamin D in a harmless and assimilable form.



Self-rising corn meal contains added leavening agents, which include baking soda, salt, and an acid-reacting phosphate.

Corn Syrup High Fructose

Corn syrup is glucose produced from corn starch in a process called wet milling. Wet milling isolates the components of the corn through chemical or biochemical separation. The sugars are further separated by the use of enzymes. Since fructose is sweeter but not naturally found in corn, scientists have ways to convert the glucose into fructose. High fructose corn syrup (HFCS), also known as corn sugar, is a combination of glucose and fructose. Depending on the level of sweetness, the glucose to fructose ratio is adjusted. For example HFCS 55 is 55% fructose and is usually used in soft drinks. HFCS 42 is 42% fructose and used in foods that require only a little sweetening. The chemical composition of high fructose corn syrup is similar to that of sucrose, or table sugar. Also called "gluten flour", "instant gluten flour", "pure gluten flour", and "vital wheat gluten" depending on vendor and manufacturer. This is flour with the starch and bran removed. A protein that is contained in bread, cereal or flour, which forms elastic strands providing body to the food being prepared, such as bread when the bread dough is kneaded. It is the gluten that traps and holds the gas created as the kneading occurs, enabling the bread to rises more effectively. Different varieties of flour contain varying amounts of gluten, thus affecting the protein levels and the rising of the foods. Flour that is high in gluten is low in starch and high in protein. However, high gluten flours may create too much body in the food, making the texture tougher or harder than desired. Yeast breads are foods that use high gluten flours, but cakes generally would not.

Yeast is a living, microscopic, single-cell organism that, as it grows, converts its food (through a process known as fermentation) into alcohol and carbon dioxide. This trait is what endears yeast to winemakers, brewmasters and breadbakers. In the making of wine and BEER, the yeast's manufacture of alcohol is desired and necessary for the final product; and carbon dioxide is what makes BEER and CHAMPAGNE effervescent. The art of breadmaking needs the carbon dioxide produced by yeast in order for certain doughs to rise. To multiply and grow, all yeast needs is the right environment, which includes moisture, food (in the form of sugar or starch) and a warm, nurturing temperature (70° to 85°F is best).

Today's brown sugar is white sugar combined with MOLASSES, which gives it a soft texture. The two most commonly marketed styles of brown sugar are light and dark, with some manufacturers providing variations in between. In general, the lighter the brown sugar, the more delicate the flavor. The very dark or "old-fashioned" style has a more intense molasses flavor.

Sunflower seeds are 22% protein and contain 50% oil. For every 100 grams, sunflower seeds contain 30 grams of unsaturated fats and 30 milligrams of essential linoleic acid, which reduces cholesterol deposits in the arteries and veins. If you are trying to break an addiction to high-fat foods, they may be a healthy alternative and will satisfy fat cravings. One hundred grams of these tiny treasures contain 7 milligrams of iron compared to 2½ milligrams in the same serving of beef. Flour made from sunflower seeds is the richest source of iron in the world, second only to brewers yeast. Sunflower flour is easily made in a coffee grinder.



Sunflower seeds are also filled with potassium which helps flush and reduce sodium in the body. These seeds are plentiful in magnesium and phosphorus which help the body absorb calcium. There are 174 milligrams of calcium in a cup of sunflower seeds. The calcium to phosphorus ratio makes the calcium readily available for the building of strong bones. Sunflower seeds are a strong source of B vitamins, especially thiamin and niacin which protects the health of the brain, skin and digestive tract.

Although soyfoods are widely recognized for their nutritional qualities, interest in soyfoods has risen recently because scientists have discovered that a soy component called isoflavones appears to reduce the risk of cancer. More research needs to be done to determine exactly how isoflavones work, but it appears that as little as one serving of soyfoods a day may be enough to obtain the benefits of this anticancer phytochemical.



Traditional soy products such as tofu, tempeh, and soy milk are very high in protein. Tempeh has the highest percentage of protein of the traditional soy products providing approximately 22 grams of protein for each 4 ounce (113 gram) serving. Tofu provides approximately 9 grams of protein for a similar small serving size. The Recommended Dietary Allowance of protein for adult males (aged 25-50) is appoximately 63 grams and 50 grams for adult females (aged 25-50). Soy products can provide a significant portion of one's daily protein needs.



It is important to keep in mind, however, that the balance of amino acids (protein building blocks) in soy is not the same as meat. Because soy foods does not have an ideal balance of amino acids, some experts recommend taking in a little extra soy foods and/or combining soy products or legumes with a whole grain dish at meals where other protein (e.g., eggs, fish) is not eaten. The amino acids in whole grains combine well with amino acids in soy and legumes to make a more ideal balance of amino acids. If a person's diet is reasonably-balanced, however, there is usually no need to be concerned about getting enough protein.

Vegetarians and health enthusiasts have known for years that foods rich in soy protein offer a good alternative to meat, poultry, and other animal-based products. As consumers have pursued healthier lifestyles in recent years, consumption of soy foods has risen steadily, bolstered by scientific studies showing health benefits from these products. Last October, the Food and Drug Administration gave food manufacturers permission to put labels on products high in soy protein indicating that these foods may help lower heart disease risk.



As with health claims for oat bran and other foods before it, this health claim provides consumers with solid scientific information about the benefits of soy protein and helps them make informed choices to create a "heart healthy" diet. Health claims encourage food manufacturers to make more healthful products. With soy, food manufacturers have responded with a cornucopia of soy-based wares. (See "The Soy Health Claim.")



No sooner had FDA proposed the health claim regulation, however, than concerns arose about certain components in soy products, particularly isoflavones. Resulting questions have engulfed the regulation in controversy.



This came as no surprise to Elizabeth A. Yetley, Ph.D., lead scientist for nutrition at FDA's Center for Food Safety and Applied Nutrition . "Every dietary health claim that has ever been published has had controversy," she says, "even the relationship of saturated fat to a healthy diet."



While the controversy may seem confusing to the consumer giving it casual consideration, a careful review of the science behind the rule reveals a strict divide between what FDA allows as a health claim based on solid scientific research and related issues that go well beyond the approved statements about health benefits of soy protein.

Salt is one of the most ubiquitous food ingredients around. Those who think of salt only as something used to perk up flavor might wonder what could possibly give this ingredient the level of importance it has gained through the ages. In reality, there is much more to this crystalline cube than first meets the eye.



Besides enhancing taste, salt has several other functions in food products. It acts as an antimicrobial or microbiological control agent. It contributes to certain chemical reactions that create a wide variety of food characteristics.



Sometimes the terms "salt" and "sodium" are used interchangeably, but technically this is not correct. "Salt" is sodium chloride. By weight, it is 40 percent sodium and 60 percent chloride.

Most foods and tap water contain sodium and chloride. Sodium is an essential nutrient, a mineral that the body cannot manufacture itself.

Because of sodium's importance to your body, the excretory and nervous systems guard against under-consumption of salt, which is a threat to your body's nerves and muscles. Other ions such as calcium, magnesium, and potassium are also very important. Concentrations of these ions are held in narrow ranges by the kidney.



The association between eating salt and the risk of blood pressure increasing is difficult to quantify. Some people are sensitive to changes in salt intake whereas others can adjust so that blood pressure does not rise at all.



Americans typically consume 4,000-8,000 mg each day, well above their daily needs. A goal for moderation for all adults, (including pregnancy and lactation) is approximately 2,400 mg of sodium per day.

Raisins are dried grapes. They are produced in many regions of the world, such as Armenia, the United States, Australia, Chile, Argentina, Macedonia, Mexico, Greece, Syria, Turkey, India, Iran, Pakistan, Iraq, China, Afghanistan, Togo, and Jamaica, as well as South Africa and Southern and Eastern Europe. Raisins may be eaten raw or used in cooking and baking.



Wheatpaste (also known as potato paste, flour paste, rice paste, Marxist glue, or simply paste) is a liquid adhesive made from vegetable starch and water. It has been used since ancient times for various arts and crafts such as book binding, decoupage, collage, and papier-mâché. It is also made for the purpose of adhering paper posters to walls and other surfaces (often in graffiti). Closely resembling wallpaper paste, it is often made by mixing roughly equal portions of flour and water and heating it until it thickens. A similar flour and water formula is taught in elementary school minus the low heat simmer as an easy substitute for ready-made adhesive.

Yeast must have certain important nutrients or it gets stressed and produces a lot of unwanted by-products--or it gets stuck and ferments too slowly, etc. Without sufficent Micro nutrients you cannot optimize fermentation speed.



If you have sporadic fermentation problems, Micro nutrients will act as insurance. When needed, they are there and provide the yeast with the minerals/vitamins/trace minerals that are missing in that particular mash. The scientific name for vitamin C, ascorbic acid helps maintain the red color of cured meat and prevents the formation of nitrosamines, which promote cancer (see SODIUM NITRITE). It helps prevent loss of color and flavor by reacting with unwanted oxygen. It is used as a nutrient additive in drinks and breakfast cereals. Sodium ascorbate is a more soluble form of ascorbic acid. ERYTHORBIC ACID is very similar to ascorbic acid, but has no value as a vitamin. Large amounts of ascorbic acid may reduce the severity of colds and offer other health benefits.

Uses As a strengthening agent for flour Azodicarbonamide is most commonly used for making "foamed" plastics (i.e. various rubbers, such as gym mats, etc.). Sounds yummy, doesn't it? This "food additive", if you even want to call it that, is not only banned in Australia and Europe, but is also ILLEGAL in Singapore, incurring up to a whopping 15 years in prison and a fine of $450,000 if you're caught using it in food.



Azodicarbonamide is also linked to "possibly" causing asthma According to www.pesticideinfo.org, azodicarbonamide is listed as "...toxicity to humans, including carcinogenicity, reproductive and developmental toxicity, neurotoxicity, and acute toxicity". A

Commercial bread bakers often use additives, such as dough conditioners, to improve the texture, appearance, and shelf-life of their bread. Dough conditioners strengthen the gluten (protein portion of wheat) and starch (complex carbohydrate) in the dough. This prevents overmixing of the bread dough, which can easily happen when large quantities of dough are made at one time. Overmixed dough rises irregularly, and thus produces funny shaped, dense loaves. The addition of dough conditioners helps to ensure rounded, well shaped, light loaves.



The most common dough conditioners are sodium stearoyl 2 lactylate, calcium stearoyl lactate, barley malt, ethoxylated and succinylated monoglycerides, and polysorbate 60.

Vitamin B3



Also called Nicotinic Acid, Niacinamide, Nicotinic.



Acts as a co-enzyme in the release of energy from carbohydrates. Also needed to help breakdown fats and proteins. Aids in formation of red blood cells.

Since the 1950's doctors have used nicotinic acid to treat high cholesterol. Niacin is the only drug available that both substantially lowers the "bad" lipids (LDL), and increases the "good"(HDL) cholesterol. The reason this vitamin is not in the forefront of cholesterol therapy is because many people treated with high doses of niacin experience bothersome side effects such as; facial flushing, nausea, stomach pain, diarrhea and much more serious, liver damage.



Milk, eggs, meats (especially liver), chicken, fish, and most other protein-rich foods contain a significant amout of niacin. Also in smaller amounts in coffee and tea.



Dificiency is very rare in modern countries. Symptoms include: Pellagra (diarrhea, dermatitis, and dementia) Less severe symptoms of deficiency include irritability, loss of appetite, weekness and swollen tongue.

Vitamin B1, or thiamine, helps the body convert carbohydrates into energy and helps in the metabolism of proteins and fats. Vitamin B1 deficiency affects the functioning of gastrointestinal, cardiovascular, and peripheral nervous systems. Beriberi and Wernicke-Korsakoff syndrome (often seen in alcoholics) are the primary diseases related to thiamine deficiency. General symptoms of beriberi include loss of appetite and overall lassitude, digestive irregularities, and a feeling of numbness and weakness in the limbs and extremities.

Folic acid is the synthetic form of the B vitamin folate. Folic acid is necessary for the synthesis of nucleic acids and the formation of red blood cells. Folic-acid deficiency most commonly causes folic-acid-deficiency anemia. Symptoms include gastrointestinal problems, such as sore tongue, cracks at the corners of the mouth, diarrhea, and ulceration of the stomach and intestines. Large doses of folic acid can cause convulsions and other nervous-system problems.

The Food and Drug Administration (FDA) regulations require enriched grain products to contain this essential vitamin.



Current studies have discovered a link between folic acid and brain function in older people. The study divided 818 people ages 50 to 75 to take either a vitamin containing 800 micrograms of folic acid a day, or a dummy pill, for three years.



On memory tests, the supplement users had scores comparable to people 5.5 years younger, Durga said. On tests of cognitive speed, the folic acid helped users perform as well as people 1.9 years younger.

A product that has GRAS status, acidified calcium sulphate is an organic acid and calcium sulfate combination that kills Listeria on the surface of products such as lunchmeats and certain cheeses, and keeps the bacteria from growing back. Listeria is responsible for causing foodborne listeriosis, which causes flu-like symptoms, meningitis, spontaneous abortions and prenatal septicemia. About 20% of the illnesses are fatal.



Until now, lactic acid and sodium lactate have offered some microbiological protection, but they cannot completely stop the organisms from reappearing. However, a study carried out at Texas A&M University and funded by the American Meat Institute Foundation demonstrates the acidified calcium sulphate appears to be able to do so.
