Water Carbonated

Carbonated water is of course, water with carbon dioxide gas dissolved into it. It is one of the main ingredients in sodas, sparkling beverages, and seltzer. The effects of carbonated water have been researched extensively. Mineral water has been concluded to LDL (bad) cholesterol and even decrease the intensity of dyspepsia (chronic indigestion) symptoms. It can even help ease cardiovascular symptoms. Blood glucose levels also decrease. This applies to solely carbonated water, not sugary sodas, which would increase blood glucose levels. Contrary to the myth, mineral-rich carbonation evens out the acidity in the body so calcium is not lost from the bones and osteoporosis is actually better prevented. One concern of over consumption of carbonated water was acid reflux. In 2006, the University of Southern California’s Keck School of Medicine showed that 62% of the healthy subjects given carbonated beverages resulted in a weaker lower esophageal sphincter. This lets more stomach acid being backed up in the esophagus, leading to reflux. It is not, however, associated with increased risk of esophageal cancer. In moderation, carbonated water by itself is safe to consume.

A colorless, crystalline organic compound belonging to the family of carboxylic acids, present in practically all plants and in many animal tissues and fluids. It is one of a series of compounds involved in the physiological oxidation of fats, proteins, and carbohydrates to carbon dioxide and water.



First isolated from lemon juice by a Swedish chemist, Carl Wilhelm Scheele, in 1784, citric acid is manufactured by fermentation of cane sugar or molasses in the presence of a fungus, Aspergillus niger. It is used in confections and soft drinks (as a flavoring agent), in metal-cleaning compositions, and in improving the stability of foods and other organic substances (by suppressing the deleterious action of dissolved metal salts)."



Citrus fruits are notable for their fragrance, and most are juice-laden. They contain a high proportion of citric acid giving them their characteristic astringent odour and flavour. They are also good sources of vitamin C. In botanical terms, "The fruit of all Citrus trees, in which the true fruit is the peel, [is] made up of an outer layer, brightly colored and rich in glands, a spongey whitish mesocarp, and a membraneous endocarp surrounding the segments. The succulent parts we eat is only a secondary tissue developed as a filler"

Aspartame

One of the most common artificial sweeteners is aspartame, also seen as Equal or Nutrasweet. It is 200 times sweeter than table sugar and lower in calories. It is composed of the amino acids aspartic acid and phenylananine, which are building blocks of proteins. The Food and Drug Administration (FDA) recommends the acceptable daily intake of 50 mg/kg of body weight/day. The European Food Safety Authority recommends only 40 mg/kg. There is much controversy on whether aspartame causes cancer. Expert agencies in the United States declare aspartame as safe to consume. A few studies have given rats aspartame with leukemia and lymphomas occurring in rats. However, many studies in the lab and by the National Cancer Institute (NCI) examined the effects of aspartame and saw no signs of aspartame as a carcinogen, or causing cancer. Health problems can still occur with the consumption of aspartame. People with phenylketonuria (PKU) should not eat foods with aspartame because phenylalanine is a component of aspartame and they cannot break down that specific amino acid. If it does, levels of phenylalanine can build up in the blood, preventing necessary chemicals to reach the brain.

Potassium is a mineral that is found naturally in foods and is necessary for many normal functions of your body, especially the beating of your heart.



Potassium is important in controlling the activity of your heart, muscles, nervous system, and just about every living cell in your body. Potassium helps activate enzymes for the use of amino acids, and is involved in bone calcification, the conversion of blood sugar into the stored glycogen for energy reserves, muscle contraction & coordination. It plays a role in maintaining the water balance & integrity of your cells. It is important to nerve transmission. It is involved in the transport of choline for acetylcholine synthesis in your brain. Protein & carbohydrate metabolism, glucose breakdown, & glycogen (stored glucose) are all potassium dependent. It is yet to be completely understood its function on the thyroid gland.

Naturaly found in: kelp, fresh & dried fruits and vegetables, rice, wheat bran, potatoes, bananas, orange juice, apricots, nuts, seeds, grains, mushrooms, molasses, and some seafood.

Pectin is a soluble fiber that is found in most plants, but is most concentrated in citrus fruits and apples. Pectin is obtained from the citrus peels of fruits and apple pulp. Pectin obtained from citrus peels is referred to as citrus pectin. For medicinal purposes, pectin is used in combination with the clay kaolin (hydrated aluminum silicate) for the management of diarrhea. Pectin is also marketed as a nutritional supplement for the management of elevated cholesterol.



D-Galacturonic acid is the principal monosaccharide compound that composes pectin. Some neutral sugars are also present in pectin. The D-galacturonic acid residues are linked together by alpha-1, 4 glycosidic linkages. There are different types of pectin. Pectin in which more than 50% of the galacturonic acid residues are esterified is called high methoxyl or HM pectin. Pectin in which less than 50% of the galacturonic acid residues are esterified is called low methoxy or LM pectin. Pectin is a non-digestible polysaccharide. So-called modified citrus pectin is pectin that has been hydrolyzed and otherwise modified to make it more digestible and absorbable.

ACACIA NILOTICA Acacia Gum - (Arabic Gum)(LINN.) All the gum-yielding Acacias exhibit the same habit and general appearance, differing only in technical characters. They are spiny shrubs or small trees, preferring sandy or sterile regions, with the climate dry during the greater part of the year.

The gum harvest from the various species lasts about five weeks. About the middle of November, after the rainy season, it exudes spontaneously from the trunk and principal branches, but the flow is generally stimulated by incisions in the bark, a thin strip, 2 to 3 feet in length and 1 to 3 inches wide being torn off. In about fifteen days it thickens in the furrow down which it runs, hardening on exposure to the air, usually in the form of round or oval tears, about the size of a pigeon's egg, but sometimes in vermicular forms, white or red, according to whether the species is a white or red gum tree.



About the middle of December, the Moors commence the harvesting. The masses of gum are collected, either while adhering to the bark, or after it falls to the ground, the entire product, often of various species, thus collected, is packed in baskets and very large sacks of tanned leather and brought on camels and bullocks to the centres of accumulation and then to the points of export, chiefly Suakin, Alexandria, or - in Senegambia - St. Louis. It is then known as 'Acacia sorts,' the term being equivalent to 'unassorted Acacia.' The unsorted gums show the widest variation as to size of fragments, whiteness, clearness, freedom from adhering matter, etc. It is next sorted or 'picked' in accordance with these differences.

Yellow 6

Commonly known as Tartrazine, E110, or Sunset Yellow, Yellow 6 is a food coloring that is added to foods to produce an orange to yellow color. All dyes are considered additives by the FDA through the Federal Food, Drug, and Cosmetic Act (FD&C Act) since it is not used for the purpose of consumption, but to improve the appearance of the product. It is the third-most-widely used dye, but evidence shows that the manufacturing process used to create the dye can also result in the production of a carcinogenic red dye called Sudan 1. Sudan 1 is a dye commonly found in solvents, oils, waxes, petrol, and shoe and floor polishes. If consumed, Sudan 1 can damage cellular DNA, or genetic material, to cause tumors.

Salt is one of the most ubiquitous food ingredients around. Those who think of salt only as something used to perk up flavor might wonder what could possibly give this ingredient the level of importance it has gained through the ages. In reality, there is much more to this crystalline cube than first meets the eye.



Besides enhancing taste, salt has several other functions in food products. It acts as an antimicrobial or microbiological control agent. It contributes to certain chemical reactions that create a wide variety of food characteristics.



Sometimes the terms "salt" and "sodium" are used interchangeably, but technically this is not correct. "Salt" is sodium chloride. By weight, it is 40 percent sodium and 60 percent chloride.

Most foods and tap water contain sodium and chloride. Sodium is an essential nutrient, a mineral that the body cannot manufacture itself.

Because of sodium's importance to your body, the excretory and nervous systems guard against under-consumption of salt, which is a threat to your body's nerves and muscles. Other ions such as calcium, magnesium, and potassium are also very important. Concentrations of these ions are held in narrow ranges by the kidney.



The association between eating salt and the risk of blood pressure increasing is difficult to quantify. Some people are sensitive to changes in salt intake whereas others can adjust so that blood pressure does not rise at all.



Americans typically consume 4,000-8,000 mg each day, well above their daily needs. A goal for moderation for all adults, (including pregnancy and lactation) is approximately 2,400 mg of sodium per day.

A natural acid found in sour apples and other fruits. In winemaking, when certain bacteria convert malic acid to LACTIC ACID (which is much less strong and sour), a process called "malolactic fermentation" occurs. This reduces the wine's tartness, adds complexity to the flavor and sometimes contributes a slight sparkle. Malic acid is used as an acidulant as well as a flavoring agent in the processing of some foods.

"Ester gum" * The natural product rosin is a complex mixture of mutually soluble organic compounds. There are three general methods of producing rosins commercially, these methods (and their products) being: solvent extraction of pure stump wood (wood rosin); tapping of gum from the living tree (gum rosin); separation from tall oil (tall oil rosin). The three rosins, freed of extraneous impurities and refined, differ somewhat quantitatively and in colour but all three may be glycinerated to produce the glycerol ester.

Flavor(s) Natural

Under the Code of Federal Regulation, natural flavor is defined as “the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating, enzymolysis (biochemical decomposition of a substance), which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs , dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional.” Natural flavoring substances are obtained from plant or animal raw materials, containing no other artificial or added ingredients. Spices approved by the Food and Drug Administration (FDA) such as black pepper and basil do not have to be listed under its specific name. Additives can also be listed under natural flavoring because they might meet FDA definition standards, the extraction process consider flavorings man-made. In addition, spice extracts, essential oils, oleoresins, onion powder/juice, and garlic powder/juice are allowed to be labeled under “flavor” or “natural flavor.”

(Emulsifier) BVO keeps flavor oils in suspension and gives a cloudy appearance to citrus-flavored soft drinks. Eating BVO leaves small residues in body fat; it is unclear whether those residues pose any risk. Fortunately, BVO is not widely used.

Bromates have been banned in numerous countries, including the United Kingdom in 1990 and Canada in 1994. In addition, in 1991, California declared bromate a carcinogen under the state's Proposition 65. Baked goods sold in California would have to bear a cancer warning if they contained more than a certain level of bromate. As a result, most California bakers have switched to bromate-free processes.
