Pears are an excellent source of water-soluble types of fibres, such as pectin.



Pears contain both soluble and insoluble fibre, which is helpful in lowering cholesterol and acts as a 'fuel' to encourage the growth of healthy bacteria in the bowel.



Pears contain no fat or cholesterol and are an excellent source of dietary fibre and vitamin C. The average pear contains four grams of fibre, which is equivalent to one and a half cups of brown rice.



The dietary fibre in pears has for some time been thought to assist in the fight against serious illnesses including some forms of cancer.

Grown in temperate zones throughout the world and cultivated for at least 3,000 years, apple varieties now number well into the thousands. Apples range in color from lemony yellow to bright yellow-green to crimson red. Their textures range from tender to crisp, their flavors from sweet to tart and from simple to complex. They're available year-round but are at their best from September through November when newly harvested. Apples are a good source of vitamins A and C.

Vegetable glycerin is a colorless, odorless, viscous, nontoxic liquid with a very sweet taste and has literally thousands of uses. Glycerin is an alcohol and is used as a preservative in the food industry, as well as a sweetener: it is very sweet, yet it contains no sugar.

This makes it an ideal sweetener for patients who cannot take sugar, such as the increasing number of Candida sufferers. Vegetable glycerin is said to be the "only acceptable sweetener" for Candida patients.

This is a wonderful sugar substitute used in many of the recipes. It is not metabolized in the body like sugar or artificial sweeteners, so it does not form toxic elements to stress bodily functions. It does contain 80 calories per tablespoon so if one is diabetic calories must be taken into account.

Also, add it at the end of any recipe that is cooked on the stove top to preserve sweetness.

Water is the most abundant nutrient in our body and plays an important transmission function in every body cell and tissue. Sixty percent of our body weight is water. The fact that you can live without food for a long period of time, even months, but live only for a few days without water is true. Under normal conditions, the body releases about one quart of water daily. Therefore, replacement to equal the losses is very important for survival.

Dehydration is the most common problem of water imbalance due to water losses and deprivation. The effects of dehydration on nutrition can adversely affect ones health. Dehydration is the major cause of ones diminished ability to perform during endurance activities. Body water is lost through the stomach, respiration, sweat, and the kidneys. It is recomended that 24oz of water a day should be taken. This amount can double or even triple with endurance type exercise.

Beets are notable for their sweetness--they have the highest sugar content of any vegetable, but they are very low in calories. Their sweet flavor comes through whether the beets are fresh or canned (which is the way most beets are sold in the U.S.). Unlike many other processed vegetables, canned beets are perfectly acceptable in both taste and texture; if not pickled, their sweet flavor is largely unaffected by the canning process. Fresh beets, however, have twice the folate (folic acid) and potassium, and have a distinctive flavor and a crisp texture not found in canned beets. Fresh beets also supply a nutritional bonus--their green tops are an excellent source of beta-carotene, calcium, and iron.



The beets we eat as a vegetable (also called red beets, root beets, and table beets) are a root vegetable with two parts, the root and the edible green leaves. They belong to the botanical species Beta vulgaris, which also includes sugar beets (which are processed for sugar), mangel-wurzels (very large bulbs used as animal fodder), foliage beets, and Swiss chard (the latter two grown for their greens, not their roots). All these vegetables are descended from a wild slender-rooted plant that grew abundantly in southern Europe. In ancient civilizations, only the green leaves of the beet plant were eaten; the roots--which did not look like modern beets--were used medicinally to treat headaches and toothaches. Beets with good-sized, rounded roots, like those we eat today, were probably developed in the sixteenth century, though it took another 200 years before they gained any popularity as a food.



Varieties



The beets generally seen in the market are globe-shaped roots, with deep red flesh and green leaves that have either green or red veins. Other less common varieties have golden or white flesh, but these are mainly raised by local growers and home gardeners.



Availability



Fresh beets are always in good supply. They are grown in more than 30 states, and crops are harvested and shipped throughout the year. June through October, however, are peak months, and at the start of the season you can find young beets with small tender roots that are suitable for cooking whole. The roots get larger--and tougher--as the season goes on. In the off-peak months, you may also find "clip-topped" beets that have been in storage, but these are less tender than freshly harvested beets.

ACACIA NILOTICA Acacia Gum - (Arabic Gum) (LINN.) All the gum-yielding Acacias exhibit the same habit and general appearance, differing only in technical characters. They are spiny shrubs or small trees, preferring sandy or sterile regions, with the climate dry during the greater part of the year.

The gum harvest from the various species lasts about five weeks. About the middle of November, after the rainy season, it exudes spontaneously from the trunk and principal branches, but the flow is generally stimulated by incisions in the bark, a thin strip, 2 to 3 feet in length and 1 to 3 inches wide being torn off. In about fifteen days it thickens in the furrow down which it runs, hardening on exposure to the air, usually in the form of round or oval tears, about the size of a pigeon's egg, but sometimes in vermicular forms, white or red, according to whether the species is a white or red gum tree.



About the middle of December, the Moors commence the harvesting. The masses of gum are collected, either while adhering to the bark, or after it falls to the ground, the entire product, often of various species, thus collected, is packed in baskets and very large sacks of tanned leather and brought on camels and bullocks to the centers of accumulation and then to the points of export, chiefly Suakin, Alexandria, or - in Senegambia - St. Louis. It is then known as 'Acacia sorts,' the term being equivalent to 'unsorted Acacia.' The unsorted gums show the widest variation as to size of fragments, whiteness, clearness, freedom from adhering matter, etc. It is next sorted or 'picked' in accordance with these differences.

Under the Code of Federal Regulation, natural flavor is defined as “the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating, enzymolysis (biochemical decomposition of a substance), which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs , dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional.” Natural flavoring substances are obtained from plant or animal raw materials, containing no other artificial or added ingredients. Spices approved by the Food and Drug Administration (FDA) such as black pepper and basil do not have to be listed under its specific name. Additives can also be listed under natural flavoring because they might meet FDA definition standards, the extraction process consider flavorings man-made. In addition, spice extracts, essential oils, oleoresins, onion powder/juice, and garlic powder/juice are allowed to be labeled under “flavor” or “natural flavor.”

Extracted from Vanilla beans. Vanilla Beans are the long, greenish-yellow seed pods of the tropical orchid plant, Vanilla planifolia. Before the plant flowers, the pods are picked, unripe, and cured until they're dark brown. The process takes up to six months. To obtain Pure Vanilla Extract, cured Vanilla Beans are steeped in alcohol. According to law, Pure Vanilla Extract must be 35 percent alcohol by volume.



Vanilla originated in Mexico, where the Aztecs used it to accent the flavor of chocolate drinks. The Mexican emperor, Montezuma, introduced Vanilla to the Spanish explorer Cortez, who brought it to Europe in the 16th century. The drink, made with Vanilla pods and cacao beans, became popular among the aristocracy in Europe. In 1602, a chemist for Queen Elizabeth I suggested that Vanilla could be used alone as a flavoring.



Extract

The distilled or evaporated oils of foods or plants (such as nuts, seeds, fruits, vegetables, herbs, spices, bark, buds, roots, leaves, meat, poultry, seafood, fish, dairy foods, or eggs) that are dissolved in an alcohol base or allowed to dry to be used as a flavoring. Food extracts as they are often labeled, are used to add a concentrated flavor to many food dishes, especially baked goods and desserts, without adding additional volume. Available in solid (cubes, granules or powdered), liquid or jelled form, extracts may be labeled as pure, natural or artificial. Pure and natural extracts are governed by laws in many countries that require compliance with procedures that take the extract ingredients directly from the named flavor, such as extracting oils directly from the vanilla bean to make pure or natural vanilla extract. Artificial extracts are flavors that do not necessarily use any ingredients directly from a source named for the extract but instead used combinations of ingredients to arrive at a flavor representative of the named food extract, such as artificial lemon extract. Some of the most widely used extracts include vanilla, almond, anise, maple, peppermint, and numerous solid or jelled extracts such as beef and chicken bouillon or meat demi-glaces. As an example of how the pure and natural extract is made, vanilla extract is created by soaking vanilla beans in water and an alcohol-based solution where it ages for several months, during which time the vanilla flavor is extracted from the bean. Grape extract is produced to assist with the wine making process. Compounds from the skin of grapes are extracted and added to the wine in order to impart tannin, color, and body into a wine. The characteristics of the wine can be changed dramatically by the amount of time the wine is in contact with the skins. If the grapes are in contact for too long, the resulting wine may be too potent, or what is sometimes called “over-extracted”.



Juices of fruits and vegetables are often extracted as juice extracts to be used similar to other food extracts, as a flavoring when preparing foods. A common utensil for the purpose of extracting lemon juice is available to assist with home recipes requiring a lemon flavoring.

Rice is a staple food in much of the world, and for good reason: with the addition of some vegetables and perhaps a bit of meat or fish, a bowl of rice makes a tasty, satisfying, and nutritious meal. Varieties



Long-grain: Long-grain brown rice stays firm when cooked. It is suitable for most western and Indian recipes, and makes a fine side dish.



Medium-grain: Medium-grain rice, found in Latin and some Asian recipes, is the main ingredient in commercially produced cold rice cereals and cakes. Its grains are plumper than those of long-grain rice, and it works well in soups and stews.



Short-grain: Short-grain, or sticky rice, is most often found in Asian recipes; because it sticks together when cooked, it's easier to eat with chopsticks.



Sweet rice: Sweet rice, or mochi rice, is a Japanese rice (also grown in the U.S.) that is used for desserts. It cooks in about half the time required for long-grain brown rice.



Aromatic rices: This category includes domestic rices such as Texmati and imported versions, including the renowned Indian basmati and Thai jasmine rices. Aromatic rices gives off a nutty-sweet fragrance as they cook, and have a sweet, delicate flavor.



Quick-cooking: Quick-cooking brown rice has been precooked so that it's ready in about 10 minutes.

Rye probably first grew wild in southwest Asia, but it was first cultivated in north and northwestern Europe, where it remains a staple food and the most common flour used for baking breads. To this day, nearly 95 percent of the world's rye is grown in the area between the Ural Mountains and the Nordic Sea. The top rye growers are Russia, Belarus, Poland and Germany.



Rye was a food staple throughout all of Europe until the 19th century, when it was outpaced by wheat. Though rare now, epidemics of St. Anthony's Fire—a condition caused by eating the ergot fungus that grows on rye—were common throughout the Middle Ages.



Nutrition



One slice (one serving) of whole grain rye bread has more than two and a half grams of protein, nearly two grams of dietary fiber, and only one gram of fat. Soluble fiber, which may help reduce the risk of heart disease by helping lower blood LDL cholesterol levels, makes up about 17 percent of the dietary fiber found in whole grain rye foods.



The insoluble fiber found in whole grain rye has a high concentration of lignans—more than any other cereal crop. Lignans not only make up part of the insoluble fiber content found in seeds and grains, they are also a phytonutrient (called phytoestrogens), similar to those in flaxseed and soy. Studies support the theory that lignans may help inhibit the development and growth of hormone-dependent cancers, such as prostate and breast cancer and reduce the risk of coronary disease.



Whole grain rye also contains many important vitamins and minerals, such as B vitamins, vitamin E, calcium, magnesium, phosphorus, potassium, iron, zinc, and folate.

Triticale is the stabilized hybrid of wheat (Triticum) and rye (Secale). Poland, Germany, China, and France account for nearly 90 percent of world triticale production. Globally, triticale is used primarily for livestock feed. In Mexico, which grows the crop, triticale is used mostly for whole-grain tricale breads and tortillas. In the US, triticale is harvested mostly for forage, but there is a small market for pancake mixes and crackers due to a savory, nutty flavor. Ethanol plants will pay a premium for triticale over barley since it has more starch and no hull, making alcohol production more efficient. Although wheat-rye hybrids date back to 1875, it was only in 1953 that the first North American triticale breeding program was initiated, at the University of Manitoba.

Barley is a very important grain in the world today. It is very versatile in every way. It has been well adapted through its evolution. It has a very mysterious and much debated beginning. Now however, barely has become well known and so have its many uses. Barley, which is of the genus Hordeum, is a cereal that belongs to the grass family Poaceae. Barley has many different varieties. The most common is Hordeum vulgare, which is a six-rowed type of barley that has a spike notched on opposite sides with three spikelets on each notch. At each notch there is a flower or floret that later develops into a kernel. Hordeum distichum is a two-rowed type of barley that has central florets producing kernels and it has lateral florets that are sterile. Lastly there is Hordeum irregulare which has fertile central florets and different arrangements of sterile and fertile lateral florets.

The buckwheat plant is entirely different from other grains and is not a grass. It is a summer annual with rather coarse, branched stems and large, broadly arrow-shaped leaves. Flower panicles and leaves rise from the nodes, both on the main stem and branches. Growth habit is indeterminate with flowers opening throughout a long season, so the seed crop does not mature at one time. The seed is partially but not entirely enclosed by adhering flower parts during development.



Buckwheat is usually seeded only after the ground is thoroughly warm in early summer. Plants will begin blooming in about 40 days from seeding and first seeds mature about 35 days later. Harvesting is done when a substantial part of the seed is ripe. Fields are then mowed and plants are stacked to dry before they can be threshed.



Seeds are pointed, broad at the base, and triangular to nearly round in cross section. They vary in size in different kinds from about 4 mm at maximum width and 6 mm. long to 2 mm. wide and 4 mm. long. The seed consists of an outer layer or hull, an inner layer, the seed coat proper, and within this a starchy endosperm and the germ. In milling the hull, which comprises 18 to 20 percent of the whole grain weight, is first removed. A second milling removes most of the seed coat or "middlings" which comprise 4 to 18 percent of the whole grain weight - depending on how completely the seed coat tissues are removed. In most buckwheat flour some of the seed coat particles remain, resulting in a light brown color. More complete milling results in a white flour.



The Japanese buckwheat is most widely grown in this country. The seeds are large, brown in color, and triangular in cross section. Plants are tall, rather coarse growers with large, broad arrow-shaped leaves.



Silverhull plants are smaller than Japanese with smaller leaves. The seeds are small, nearly round in cross section, glossy and gray in color. The hulls are thinner than in Japanese. A kind tenned Common Gray is probably identical with Silverhull.



Tartary buckwheat has small seeds, nearly round in cross section. Color varies from gray to black. The hull may be smooth to rough and spiny. Leaves are relatively small, narrow and arrow-shaped. Plants may be almost viny in habit. The flour from Tartary buckwheat is inferior to that from Japanese or Silverhull.



Wing-seeded buckwheat is similar to Japanese except that the hull at the angles of the seed is extended to form a wing. It is not normally planted, but may be present as a mixture in other kinds.

Most of the buckwheat grown in the United States is milled into flour which is used largely in pancakes. For pancakes the flour is usually blended with that from other grains. Whole buckwheat grain may be used in poultry scratch feed mixtures. The middlings from milling make good livestock feed as they are high in protein. The straw is higher in protein but lower in digestable carbohydrates than grass grain straw.



The buckwheat plant is an excellent honey source as the blossoms are rich in nectar, and blooming continues into the fall months. Some beekeepers plant buckwheat primarily for such use.

Of African origin but now common in tropical and sub-tropical Asia. An oil is extracted from the seed and used for cooking, salad oil and margarines. It is also available as toasted sesame oil for oriental cooking. The whole seeds can also be eaten and are most often seen as a decoration on cakes, confectionery etc. Sesame seed paste, tahini, is used in many dishes e.g. hummus. Sugar cane, is a tropical plant that is a cane. This cane is ready for cutting in 11-18 months. Unfortunately, most of the cutting is still done manually, although some is done mechanically. About half of the loading being mechanised.

After reaching the factory, the cane is chopped with a series of rapidly rotating knives. Iron and iron-alloy particles are removed by an electromagnet. The chopped cane is shredded, crushed and a small amount of water added to faciliitate cane juice separation. Generally, the crushed mixture is slightly acid[pH5.5].



Mixed juice is heated and clarified by the addition of lime and the decantation of impurities. The clarified juice is evaporated and the syrup transferred back and forth depending upon the Brix [pan 1: 16-180 Brix; pan 3: 55-750 Brix; final pan: 900 Brix]. The final syrup mix is centrifuged to extract the sugar crystals and remove molasses and liquid. The brown sugar may be further refined.



Brown sugar or raw sugar is decolorized by passing through carbon filters, recrystallizing in vacuum boiling pans, and removing final liquid by centrigation. It is simply a crystallization process.



From the process, three by-products of sugar cane are formed: molasses, bagasse and filter scums. The latter two by-products are recycled back into the processing plant. The filter scums contain phosphoric acid and are used as fertilizers in the fields. The bagasse is used as fuel to produce steam and electricity.



Turbinado sugar is raw cane sugar. This raw sugar that is refined fromthe initial pressing of sugar cane. The sugar crystals aren't stripped of any color or flavor giving it a natural taste. All natural Sugar In The Raw has no additives.

Canola oil [kan-OH-luh] "The market name for rapeseed oil which, as might be assumed from the name, is expressed from rape seeds. For obvious reasons, the name was changed to canola by the Canadian seed-oil industry. Canola is, in fact, Canada's most widely used oil. It's commonly referred to there as lear oil, for "low erucic acid rapeseed" oil. The popularity of canola oil is rising fast in the United States, probably because it's been discovered to be lower in saturated fat (about 6 percent) than any other oil. This compares to the saturated fat content of peanut oil (about 18 percent) and palm oil (at an incredibly high 79 percent). Another canola oil selling point is that it contains more cholesterol-balancing monounsaturated fat than any oil except olive oil. It also has the distinction of containing Omega-3 fatty acids, the wonder polyunsaturated fat reputed to not only lower both cholesterol and triglycerides, but to contribute to brain growth and development as well. Cold Extraction Methods

Cold Pressed Cold pressing refers to oils obtained through pressing and grinding fruit or seeds with the use of heavy granite millstones or modern stainless steel presses, which are found in large commercial operations. Although pressing and grinding produces heat through friction, the temperature must not rise above 120ºF for any oil to be considered cold pressed. The maximum temperature for cold pressed olive oil is somewhat lower. Olive, sesame, peanut, and sunflower are among the oils obtained from cold pressing. (Highly refined versions of these oils are also produced.) Cold pressed oils retain all of their flavor, aroma, and nutritional value.

Vacuum Extraction Vacuum extraction is another method of cold extraction that produces oils with an expeller process. The process occurs in an atmosphere with no oxygen or light. The temperature during the expeller process may be as low as 70ºF.

Heat Extraction Methods

Expeller Pressed Expeller pressing is like cold pressing except that extreme pressure is added during the pressing. As much pressure as 15 tons per square inch is used to squeeze the oil from the fruit or seeds. The high pressure also produces high heat (as high as 300ºF ) through friction, so the oils produced with the expeller process cannot be considered cold pressed. The oils obtained with this method retain much their flavor, aroma, and nutritional value, but not to the extent of cold pressed oils.

Solvent Extraction Chemical solvents are used to extract oil, which is then boiled to eliminate most of the solvents. Further refining such as bleaching, deodorizing, and heating to high temperatures cleanses the oil, resulting in a product that has very little of the original flavor, aroma, or nutrients contained in the seeds or fruit before processing. Most of the oils produced with this method have a high smoke point and a long shelf life.

Here's the catch: You need to eat a sizable quantity of oats to reap their benefits. You must eat approximately 1 1/2 cups of cooked oatmeal (about 3/4 cup raw) every day to get the amount of soluble fiber necessary to lower your cholesterol.

ACACIA NILOTICA Acacia Gum - (Arabic Gum) (LINN.) All the gum-yielding Acacias exhibit the same habit and general appearance, differing only in technical characters. They are spiny shrubs or small trees, preferring sandy or sterile regions, with the climate dry during the greater part of the year.

The gum harvest from the various species lasts about five weeks. About the middle of November, after the rainy season, it exudes spontaneously from the trunk and principal branches, but the flow is generally stimulated by incisions in the bark, a thin strip, 2 to 3 feet in length and 1 to 3 inches wide being torn off. In about fifteen days it thickens in the furrow down which it runs, hardening on exposure to the air, usually in the form of round or oval tears, about the size of a pigeon's egg, but sometimes in vermicular forms, white or red, according to whether the species is a white or red gum tree.



About the middle of December, the Moors commence the harvesting. The masses of gum are collected, either while adhering to the bark, or after it falls to the ground, the entire product, often of various species, thus collected, is packed in baskets and very large sacks of tanned leather and brought on camels and bullocks to the centers of accumulation and then to the points of export, chiefly Suakin, Alexandria, or - in Senegambia - St. Louis. It is then known as 'Acacia sorts,' the term being equivalent to 'unsorted Acacia.' The unsorted gums show the widest variation as to size of fragments, whiteness, clearness, freedom from adhering matter, etc. It is next sorted or 'picked' in accordance with these differences.



There are many kinds of Acacia Gum in commerce:

Vegetable glycerin is a colorless, odorless, viscous, nontoxic liquid with a very sweet taste and has literally thousands of uses. Glycerin is an alcohol and is used as a preservative in the food industry, as well as a sweetener: it is very sweet, yet it contains no sugar.

This makes it an ideal sweetener for patients who cannot take sugar, such as the increasing number of Candida sufferers. Vegetable glycerin is said to be the "only acceptable sweetener" for Candida patients.

This is a wonderful sugar substitute used in many of the recipes. It is not metabolized in the body like sugar or artificial sweeteners, so it does not form toxic elements to stress bodily functions. It does contain 80 calories per tablespoon so if one is diabetic calories must be taken into account.

Also, add it at the end of any recipe that is cooked on the stove top to preserve sweetness.

Oat Bran has received considerable attention in the medical community for its role in helping reduce blood cholesterol.

Nutrition experts believe that Beta glucans, the water-soluble fibers present in oat bran act as an active agent for cholesterol inhibition. Since oat bran is a food, after all, and supplies beneficial fiber to assist in regulating gastro-intestinal function as well, nutritionists also recommend increased daily intake.

For a while, oat bran was touted as a miracle food, a sort of Roto-Rooter for your veins. Predictably, food manufacturers rushed to pump their breads and cereals with oat bran. In truth, oat bran is not proven to be more effective at lowering cholesterol than several other brans or, for that matter, other high-fiber foods. And the results are not as miraculous as claimed. Fiber is, however, definitely beneficial because it keeps the gastrointestinal tract in good working order (it also contains no calories).

This material is used in a variety of food applications including as a leavening agent in baked goods, a water retention agent for cooked meat products,and as a sequesterant (as in potato processing). Generally recognized as safe.

Also known as bicarbonate of soda, baking soda is used as a LEAVENER in baked goods. When combined with an acid ingredient such as buttermilk, yogurt or molasses, baking soda produces carbon dioxide gas bubbles, thereby causing a dough or batter to rise. Because it reacts immediately when moistened, it should always be mixed with the other dry ingredients before adding any liquid; the resulting batter should be placed in the oven immediately. At one time, baking soda was used in the cooking water of green vegetables to preserve their color. That practice was discontinued, however, when it was discovered that baking soda destroys the vitamin C content of vegetables.



Baking Soda, a sodium bicarbonate, is a naturally occurring substance that is present in all living things--it helps living things maintain the pH balance necessary for life. Baking Soda is made from soda ash, also known as sodium carbonate. The soda ash is obtained in one of two ways: it can be manufactured by passing carbon dioxide and ammonia through a concentrated solution of sodium chloride (table salt). Whether the soda ash is mined or processed, it is dissolved into a solution through which carbon dioxide is bubbled, and sodium bicarbonate precipitates out, forming Baking Soda

Soy lecithin is a mixture of fatty substances that are derived from the processing of soybeans. Lecithin is separated from soybean oil by the addition of water and centrifugation (rapid spinning) and purified for use as a food additive. Its chemical name is phosphatidylcholine, which identifies its major components of choline, phosphoric acid, glycerin, and fatty acids. Lecithin is used widely in foods as an emulsifier, stabilizer, and antioxidant.



Studies show most soy-allergic individual can safely eat products containing soy lecithin without experiencing any allergic reactions.



Although soyfoods are widely recognized for their nutritional qualities, interest in soyfoods has risen recently because scientists have discovered that a soy component called isoflavones appears to reduce the risk of cancer. More research needs to be done to determine exactly how isoflavones work, but it appears that as little as one serving of soyfoods a day may be enough to obtain the benefits of this anticancer phytochemical.



Traditional soy products such as tofu, tempeh, and soy milk are very high in protein. Tempeh has the highest percentage of protein of the traditional soy products providing approximately 22 grams of protein for each 4 ounce (113 gram) serving. Tofu provides approximately 9 grams of protein for a similar small serving size. The Recommended Dietary Allowance of protein for adult males (aged 25-50) is appoximately 63 grams and 50 grams for adult females (aged 25-50). Soy products can provide a significant portion of one's daily protein needs.



It is important to keep in mind, however, that the balance of amino acids (protein building blocks) in soy is not the same as meat. Because soy foods does not have an ideal balance of amino acids, some experts recommend taking in a little extra soy foods and/or combining soy products or legumes with a whole grain dish at meals where other protein (e.g., eggs, fish) is not eaten. The amino acids in whole grains combine well with amino acids in soy and legumes to make a more ideal balance of amino acids. If a person's diet is reasonably-balanced, however, there is usually no need to be concerned about getting enough protein.

Vegetarians and health enthusiasts have known for years that foods rich in soy protein offer a good alternative to meat, poultry, and other animal-based products. As consumers have pursued healthier lifestyles in recent years, consumption of soy foods has risen steadily, bolstered by scientific studies showing health benefits from these products. Last October, the Food and Drug Administration gave food manufacturers permission to put labels on products high in soy protein indicating that these foods may help lower heart disease risk.



As with health claims for oat bran and other foods before it, this health claim provides consumers with solid scientific information about the benefits of soy protein and helps them make informed choices to create a "heart healthy" diet. Health claims encourage food manufacturers to make more healthful products. With soy, food manufacturers have responded with a cornucopia of soy-based wares. (See "The Soy Health Claim.")



No sooner had FDA proposed the health claim regulation, however, than concerns arose about certain components in soy products, particularly isoflavones. Resulting questions have engulfed the regulation in controversy.



This came as no surprise to Elizabeth A. Yetley, Ph.D., lead scientist for nutrition at FDA's Center for Food Safety and Applied Nutrition . "Every dietary health claim that has ever been published has had controversy," she says, "even the relationship of saturated fat to a healthy diet."



While the controversy may seem confusing to the consumer giving it casual consideration, a careful review of the science behind the rule reveals a strict divide between what FDA allows as a health claim based on solid scientific research and related issues that go well beyond the approved statements about health benefits of soy protein.

Dictionaries describe the term "plain-vanilla" as something "simple, plain or ordinary." Few statements could be further from the truth-for there is definitely nothing ordinary about the seductively aromatic vanilla bean. This long, thin pod is the fruit of a luminous celadon-colored orchid (vanilla planifolia), which, of over 20,000 orchid varieties, is the only one that bears anything edible. Native to tropical America, the vanilla bean was cultivated and processed by the Aztecs, who used it to flavor a cocoa-based drink

Produced from the fermentation of corn SUGAR, xanthan gum is used as a thickener, EMULSIFIER and STABILIZER in foods such as dairy products and salad dressings.

Some people are allergic to xanthan gum, with symptoms of intestinal gripes, diarrhea, temporary high blood pressure, and migraine headaches

Also, since xanthan gum is produced by a bacterium that is fed corn to grow, some people allergic to corn will also react to it. Yellow Phrygian Husk is a common source of bacterium in which xanthan gum is created

Also used by people who are allergic to gluten

Extracted from Vanilla beans. Vanilla Beans are the long, greenish-yellow seed pods of the tropical orchid plant, Vanilla planifolia. Before the plant flowers, the pods are picked, unripe, and cured until they're dark brown. The process takes up to six months. To obtain Pure Vanilla Extract, cured Vanilla Beans are steeped in alcohol. According to law, Pure Vanilla Extract must be 35 percent alcohol by volume.



Vanilla originated in Mexico, where the Aztecs used it to accent the flavor of chocolate drinks. The Mexican emperor, Montezuma, introduced Vanilla to the Spanish explorer Cortez, who brought it to Europe in the 16th century. The drink, made with Vanilla pods and cacao beans, became popular among the aristocracy in Europe. In 1602, a chemist for Queen Elizabeth I suggested that Vanilla could be used alone as a flavoring.



Extract

The distilled or evaporated oils of foods or plants (such as nuts, seeds, fruits, vegetables, herbs, spices, bark, buds, roots, leaves, meat, poultry, seafood, fish, dairy foods, or eggs) that are dissolved in an alcohol base or allowed to dry to be used as a flavoring. Food extracts as they are often labeled, are used to add a concentrated flavor to many food dishes, especially baked goods and desserts, without adding additional volume. Available in solid (cubes, granules or powdered), liquid or jelled form, extracts may be labeled as pure, natural or artificial. Pure and natural extracts are governed by laws in many countries that require compliance with procedures that take the extract ingredients directly from the named flavor, such as extracting oils directly from the vanilla bean to make pure or natural vanilla extract. Artificial extracts are flavors that do not necessarily use any ingredients directly from a source named for the extract but instead used combinations of ingredients to arrive at a flavor representative of the named food extract, such as artificial lemon extract. Some of the most widely used extracts include vanilla, almond, anise, maple, peppermint, and numerous solid or jelled extracts such as beef and chicken bouillon or meat demi-glaces. As an example of how the pure and natural extract is made, vanilla extract is created by soaking vanilla beans in water and an alcohol-based solution where it ages for several months, during which time the vanilla flavor is extracted from the bean. Anise extract, a sweet licorice tasting flavoring, is produced by dissolving the oil of anise seeds into alcohol.



Grape extract is produced to assist with the wine making process. Compounds from the skin of grapes are extracted and added to the wine in order to impart tannin, color, and body into a wine. The characteristics of the wine can be changed dramatically by the amount of time the wine is in contact with the skins. If the grapes are in contact for too long, the resulting wine may be too potent, or what is sometimes called “over-extracted”.



Juices of fruits and vegetables are often extracted as juice extracts to be used similar to other food extracts, as a flavoring when preparing foods. A common utensil for the purpose of extracting lemon juice is available to assist with home recipes requiring a lemon flavoring.

Flavor(s) Natural

Under the Code of Federal Regulation, natural flavor is defined as “the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating, enzymolysis (biochemical decomposition of a substance), which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable juice, edible yeast, herb, bark, bud, root, leaf or similar plant material, meat, seafood, poultry, eggs , dairy products, or fermentation products thereof, whose significant function in food is flavoring rather than nutritional.” Natural flavoring substances are obtained from plant or animal raw materials, containing no other artificial or added ingredients. Spices approved by the Food and Drug Administration (FDA) such as black pepper and basil do not have to be listed under its specific name. Additives can also be listed under natural flavoring because they might meet FDA definition standards, the extraction process consider flavorings man-made. In addition, spice extracts, essential oils, oleoresins, onion powder/juice, and garlic powder/juice are allowed to be labeled under “flavor” or “natural flavor.”
