Water is the most abundant nutrient in our body and plays an important transmission function in every body cell and tissue. Sixty percent of our body weight is water. The fact that you can live without food for a long period of time, even months, but live only for a few days without water is true. Under normal conditions, the body releases about one quart of water daily. Therefore, replacement to equal the losses is very important for survival.

Dehydration is the most common problem of water imbalance due to water losses and deprivation. The effects of dehydration on nutrition can adversely affect ones health. Dehydration is the major cause of ones diminished ability to perform during endurance activities. Body water is lost through the stomach, respiration, sweat, and the kidneys. It is recomended that 24oz of water a day should be taken. This amount can double or even triple with endurance type exercise.



A note about water: More and more evidence shows the benifit of being well hydrated.

Studies show that 75% of Americans are chronically dehydrated (likely applies to half the world's population), leading to possible health problems such as fatigue. In 37% of Americans, the thirst mechanism is so weak that it is often mistaken for hunger, leading to over-eating. Even MILD dehydration will slow down one's metabolism as much as 3%.



Bottled Water: Some types of bottled water are not subject to the same regulations as tap water. Squashes generally refer to four species of the genus Cucurbita native to Mexico and Central America, also called marrows depending on variety or the nationality of the speaker. A pumpkin is a squash fruit, usually orange in colour when ripe. Pumpkins grow as a gourd from a trailing vine of the genus Cucurbita Cucurbitaceae. Vitamin B3



Also called Nicotinic Acid, Niacinamide, Nicotinic.



Acts as a co-enzyme in the release of energy from carbohydrates. Also needed to help breakdown fats and proteins. Aids in formation of red blood cells.

Since the 1950's doctors have used nicotinic acid to treat high cholesterol. Niacin is the only drug available that both substantially lowers the "bad" lipids (LDL), and increases the "good"(HDL) cholesterol. The reason this vitamin is not in the forefront of cholesterol therapy is because many people treated with high doses of niacin experience bothersome side effects such as; facial flushing, nausea, stomach pain, diarrhea and much more serious, liver damage.



Milk, eggs, meats (especially liver), chicken, fish, and most other protein-rich foods contain a significant amout of niacin. Also in smaller amounts in coffee and tea.

Folic acid is the synthetic form of the B vitamin folate. Folic acid is necessary for the synthesis of nucleic acids and the formation of red blood cells. Folic-acid deficiency most commonly causes folic-acid-deficiency anemia. Symptoms include gastrointestinal problems, such as sore tongue, cracks at the corners of the mouth, diarrhea, and ulceration of the stomach and intestines. Large doses of folic acid can cause convulsions and other nervous-system problems.

The Food and Drug Administration (FDA) regulations require enriched grain products to contain this essential vitamin.



Current studies have discovered a link between folic acid and brain function in older people. The study divided 818 people ages 50 to 75 to take either a vitamin containing 800 micrograms of folic acid a day, or a dummy pill, for three years.



On memory tests, the supplement users had scores comparable to people 5.5 years younger, Durga said. On tests of cognitive speed, the folic acid helped users perform as well as people 1.9 years younger.

Celery is a very good source of fiber, and a good source of potassium and calcium. Look for bunches with a good tight formation, leaves should be fresh and unwilted. Stems should be firm and crisp when snapped. Brown or cracked bunches should be avoided.

Uses: Serve pickled cocktail onions with a selection of cold meats or with crusty bread and mature Cheddar cheese.

To store: Keep in a cool, dark place for up to 1 year.



Pearl onions

Also known as button or baby onions, these are larger than pickling onions and have a sweet, delicate flavour.

Uses: Add whole to stews and casseroles or cook them very gently in a little butter and a splash of balsamic vinegar for 20-30 minutes until tender, serve with roasted meat.



Pickling onions

These are maincrop onions, picked when they are still small. Available only in the autumn, they have a strong, pungent flavour.

Cassia (Cinnamomum aromaticum, synonym C. cassia) is an evergreen tree native to southern China and mainland Southeast Asia west to Myanmar. Like its close relative, Cinnamon (Cinnamomum zeylanicum, also known as "true cinnamon" or "Ceylon cinnamon"), it is used primarily for its aromatic bark, which is used as a spice.



The Cassia tree grows to 10-15 m tall, with greyish bark, and hard elongated leaves 10-15 cm long, that have a decidedly reddish colour when young.



Most of the spice sold as cinnamon in the United States and Canada (where true cinnamon is still generally unknown) is actually cassia. In some cases, cassia is labeled "Indonesian cinnamon" to distinguish it from the more expensive true cinnamon (Cinnamomum zeylanicum), which is the preferred form of the spice used in Mexico and Europe.



A 2003 study published in the DiabetesCare journal[1] followed Type 2 diabetics ingesting 1, 3 or 6 grams of cassia daily. Those taking 6 grams shows changes after 20 days, and those taking lesser doses showed changes after 40 days. Regardless of the amount of cassia taken, they reduced their mean fasting serum glucose levels 18–29%, their triglyceride levels 23–30%, their LDL cholesterol 7–27%, and their total cholesterol 12–26%, over others taking placebos.



The effects, which may even be produced by brewing a tea from cassia bark, may also be beneficial for non-diabetics to prevent and control elevated glucose and blood lipid levels. Cassia's effects on enhancing insulin sensitivity appear to be mediated by polyphenols [3]. Despite these findings, cassia should not be used in place of anti-diabetic drugs, unless blood glucose levels are closely monitored and its use is combined with a strictly controlled diet and exercise program.



There is also much anecdotal evidence that consumption of cassia has a strong effect in lowering blood pressure, making it potentially useful to those suffering from hypertension. The USDA has three ongoing studies that are monitoring the blood pressure effect.

Extract

These shiny scarlet berries are grown in huge, sandy bogs on low, trailing vines. Drying of Bioproducts is a mass transfer process resulting in the removal of water moisture or moisture from another solvent, by evaporation from a solid, semi-solid or liquid (hereafter product) to end in a solid state. To achieve this, there must be a source of heat, and a sink of the vapor thus produced. In bioproducts (food, grains, vaccines), and pharmaceuticals, the solvent to be removed is almost invariably water



In the most common case, a gas stream, e.g., air, applies the heat by convection and carries away the vapor as humidity. Other possibilities are vacuum drying, where heat is supplied by contact conduction or radiation (or microwaves) while the produced vapor is removed by the vacuum system. Another indirect technique is drum drying, where a heated surface is used to provide the energy and aspirators draw the vapor outside the drum.



Freeze drying or lyophilization is a drying method where the solvent is frozen prior to drying and is then sublimed, i.e., passed to the gas phase directly from the solid phase, below the melting point of the solvent. Freeze drying is often carried out under high vacuum to allow drying to proceed at a reasonable rate. This process avoids collapse of the solid structure, leading to a low density, highly porous product, able to regain the solvent quickly. In biological materials or foods, freeze drying is regarded as one of the best if not the best method to retain the initial properties. It was first used industrially to produce dehydrated vaccines, and to bring dehydrated blood to assist war casualties. Now freeze drying is increasingly used to preserve some foods, especially for backpackers going to remote areas. The method may keep protein quality intact, the same as the activity of vitamins and bioactive compounds.



In turn, the mechanical extraction of the solvent, e.g., water, by centrifugation, is not considered "drying". The ubiquitous term dehydration may mean drying of water-containing products as foods, but its meaning is more vague, as it is also applied for water removal by osmotic drive from a salt or sugar solution. In medicine, dehydration is the situation by which a person loses water by respiration, sweating and evaporation and does not incorporate, for whatever reason, the "make-up" water required to keep the normal physiological behavior of the body.
